Dinner

Mushroom & Goat’s Cheese Pancakes with Kale & Cashew Pesto

Ingredients:

For the pancakes:

For the pesto:

  • 50g kale
  • 1 small clove garlic
  • 45g raw cashew nuts
  • 14g basil
  • Juice of ¼ lemon
  • 10g parsley
  • ¼cup water
  • ¼cup olive oil

For the filling:

  • 1 red onion, sliced
  • 1 large clove garlic, finely chopped
  • ½tsp sunflower oil
  • 3 large Portobello mushrooms
  • 130g cherry tomatoes
  • 200g spinach
  • Pinch salt & fresh black pepper
  • Squeeze of lemon

Method:

Batter:

  • Put the flour into a bowl & make a well in the centre; whisk the egg in a separate bowl, then drop it into the well in the flour.
  • Whisk the mixture together, slowly adding the almond milk.
  • You should now have quite a runny mixture. Leave to rest for 20min.

Pesto:

  • Blend all ingredients in a food processor until smooth.
  • Add a little more lemon juice to taste. Set aside.

Filling:

  • Sauté the sliced onion & garlic with some coconut oil on a medium heat for 4-5min until the onions are soft.
  • Slice the mushrooms lengthways; toss with the onions & tomatoes for 2-3 minutes until soft & juicy.
  • When the mushrooms are almost done, stir through the spinach until wilted. Remove from the heat while you prepare your pancakes.

Pancakes: Melt ¼tsp coconut oil in a pancake pan on a medium heat. When the pan is hot, cook each pancake until golden-brown on both sides. To serve, spread a tablespoon of the pesto over each pancake, pile on the mushroom mixture & crumble over the goat’s cheese. Roll up the pancake & serve hot with a side of green salad.
