- 1 lemon
- 160 g gluten-free flour

- 6 g baking powder
- 85 g unsalted butter
- 160 ml almond milk
- 15 g brown sugar
Directions
- Preheat the oven to 175°C. Grease a 23 x 33 cm (9 x 13 inch) ceramic or glass baking dish with unsalted butter.
- In a large bowl, whisk together the cornstarch and cane sugar.
- Wash the peaches, blackberries, and lemon under cool running water. Slice the peaches into 1.5 cm wedges. Squeeze 2 tablespoons (about 30 ml) of lemon juice over the fruit and stir to combine. Transfer the fruit mixture to the greased baking dish and bake for 15 minutes, until bubbling.
- While the fruit bakes, make the cobbler topping: In a food processor, combine the gluten-free flour, salt, and baking powder. Cut the unsalted butter into small pieces (about 0.5 cm) and pulse until the mixture resembles coarse crumbs. Add the almond milk and pulse until just combined into a soft dough.
- Remove the baking dish from the oven. Drop the dough over the fruit in 12 mounds (about 1/3 cup each). Sprinkle the dough with brown sugar.
- Bake for 30–35 minutes, until the topping is golden brown. Serve warm.
