Gluten-free flours do not have the stretchy, springy properties found in wheat products. That's why xanthan gum has been added to the mix, ensuring a less crumbly texture.

My husband is gluten-intolerant and we struggled at first to find a flour that worked. This is the perfect wheat-flour replacement, we use it for pizza bases, pastry, pasta etc and it always works!

Make a lovely GF pancake. Product labelling is poor: no date of manufacture. Where do the grains come from, when were they milled? Product is not 'made in SA' but 'Mixed in SA'.

Best gluten free flour I have tried so far! Being gluten intolerant is so difficult and you often miss the foods that now make you paralytically ill. With this flour, I can at least get a tiny piece of my old unhealthy eating habits back ;-)
