Ingredients

• 1 cup FtN Couscous

• 1 cup boiling Water or Vegetable Stock

• ½ cup Peas (fresh or frozen)

• 1 Courgette, sliced and grilled

• A handful of Snap Peas, blanched

• ¼ cup shelled Pistachios, roughly chopped

• A few sprigs of fresh Dill

• A small handful of Green Olives, sliced

• ½ cup Cooked Beans (any mild white bean works well)

• 2 tbsp Mint, chopped

• 2 tbsp Parsley, chopped

• 1 Avocado, diced

• Zest of 1 Lemon

For the Sauce

• 2 tbsp Tahini

• 1 tsp Honey

• 2 tbsp Olive Oil

• Juice of 1-2 Lemons (to taste)

• 1 clove Garlic, crushed

• A pinch of Salt

• 2 tbsp Mixed Herbs, chopped (Parsley, Dill, Mint)

Method

  1. Pour the boiling water or stock over the couscous, cover, and leave for 5 minutes until the grains absorb the liquid. Fluff gently with a fork.

• 1 cup roasted Butternut, tossed in Rose Harissa before roasting

• ½ cup Goat’s Cheese, crumbled

• ¼ cup Candied Walnuts, roughly chopped

• A handful of Herbs, chopped (Parsley, Coriander, or Mint)

For the Dressing

• 1 tsp Mustard

• 1 tsp Honey

• 2 tbsp Olive Oil

• A pinch of Salt

• 1 tsp Rose Harissa

Method

  1. Pour boiling water or stock over the couscous, cover, and let sit for 5 minutes. Fluff gently with a fork.
  2. In a large bowl, combine the couscous with the roasted onion, harissa-roasted butternut, feta, walnuts, and herbs.
  3. Whisk together the dressing ingredients until smooth and drizzle over the salad.
  4. Toss gently and serve warm or at room temperature, with extra herbs for garnish.


Summer Couscous Salad

Ingredients

• 1 cup FtN Couscous

• 1 cup boiling Water or Chicken Stock

• 1 tsp Olive Oil or Butter

• 4 rashers Streaky Bacon, chopped and crisped

• 1 cup Corn Kernels (fresh, grilled, or canned)

• 1½ cups Cherry Tomatoes, halved

• 1 large Avocado, diced

• ¼ small Red Onion, finely chopped (optional)

• A handful of fresh Coriander or Parsley, chopped

Salt and Pepper, to taste

For the Dressing

• ⅓ cup plain Greek Yoghurt (or coconut yoghurt for dairy-free)

• 1½ tbsp Olive Oil

• 1 tbsp Lime or Lemon Juice

• 1 tsp Honey or Maple Syrup

• ½ tsp Smoked Paprika

• ¼ tsp Garlic Powder

• ¼ tsp Cumin (optional)

Salt and Pepper, to taste

Method

  1. Pour boiling water or stock over the couscous with olive oil, cover, and let sit for 5 minutes. Fluff gently with a fork.
