Silan Roast Veggies

Silan is a traditional Middle Eastern date syrup, prepared by slowly cooking and filtering the dates to create a rich and delicious natural liquid sweetener. The honey-caramel taste of this exotic fruit not only adds flavour to this recipe but packs it full of natural goodness!

INGREDIENTS

 

METHOD

  1. Heat oven to 180C.
  2. Slice cauliflower through the core. You want to get slices of cauliflower. Arrange on a baking sheet.
  3. Quarter the brinjal and arrange on the baking sheet.
  4. Mix the sesame oil and the Silan. Using a pastry brush, brush the vegetables with the micture. Sprinkle with salt. Allow to bake for ±20mins.
  5. This is served with sweet potato puree, pan fried hake, blanched green beans, hemp seed puree, a lemon cheek and crimson micro leaves.
