Sweet Potato Toast is the New Avocado Toast

Move over avocado toast, there’s a new healthy sensation in town!

Food blogger Kelsey had the brilliant idea of popping sweet potato slices into the toaster in lieu of bread, and although it may take two or three rounds to cook through, the result is a delicious, nutritious, naturally gluten-free alternative to toast!

Your choice of toppings is anything you would normally put on toast, or you can get more creative.

INGREDIENTS

1 Sweet Potato

METHOD

Simply peel your sweet potato and cut it into thin slices (about ¾ of a centimetre in width), as you would with a loaf of bread. Pop the slice in your toaster – you may need to do this several times, as it can take up to 8 minutes to cook – and wait for it to brown (it should be tender but not mushy).

TOPPINGS

Add any toppings you would normally add to toast. Here are some ideas:

Kelsey from Little Bits of Real Food, tried sweet potato toast three ways:

  • Almond butter, banana slices and cinnamon
  • Avocado, salt, pepper and lemon zest
  • Tuna salad and red onion

Lisa from Downshiftology came up with the brilliant idea of topping sweet potato toast with avocado, cucumber, smoked salmon and a poached egg.

    Fantastic idea and so healthy! I used a sandwich press to make my sweet potato toast, it works beautifully. Thanks FTN!
