Easy Scrambled Tofu Breakfast Wrap

Makes 2

Ingredients


  • 1 block silken tofu
  • 1 onion sliced
  • 1 cup sliced mushrooms
  • 2 handfuls baby spinach
  • Salt
  • 2 wraps

Method


  1. Slice up the onion and mushrooms and fry in a pan until cooked. Add in the spinach and cook together. 
  2. Fry the tofu and a pinch of salt and scramble the tofu while you fry.
  3. Add this all into a wrap and enjoy it. You can add in some lovely extra ingredients like tomatoes and avo into this but I thought we would keep this one super simple.
