Please Note: Keep your bread premix refrigerated.
To bake 1 loaf, 6 large muffins or 12 small muffins:
- 230g Banting Basket Bread Premix
- 5 eggs
- 5Tbsp melted coconut oil
- Place the bread mix into a large bowl, add the oil & the eggs. Mix well.
- The consistency will be like a thick pouring batter. Pour into a greased loaf/ muffin pan.
- Bake at 180°, approx. 1 hour for bread, or 40 minutes for muffins.
- Add your favourite toppings & enjoy!

The first attempt wasn't successful - it stuck to the pan and broke - so it's just as well I got the 690g size so I could give it another go. The second loaf was successful. I substituted the eggs for flax eggs, the yoghurt for soy milk and the butter for coconut oil. So it ends up being quite an oily bread, but ok. To prevent the same issues that I had with the first loaf, I lined the tin with wax paper and I baked it for 15 minutes longer (1h15m). The erythritol makes it sweet, though, so it isn't a savoury bread.
