Vegan Mac ‘n ‘Cheese’

Ingredients


  • 120g macaroni, boiled to pack instructions
  • 1/4 brown onion, sliced
  • 1 Tbsp olive oil 
  • 70g sweet potato, peeled and boiled
  • 70g butternut, peeled and boiled
  • 1 Tbsp nutritional yeast
  • ½ tsp turmeric
  • ¼ tsp smoked paprika
  • 2 tsp soy sauce
  • ½ tsp garlic powder/1 clove fresh garlic 
  • ⅓ cup coconut milk
  • Salt and pepper

Cashew parmesan

  • 3 Tbsp roasted cashews
  • 1 Tbsp nutritional yeast
  • 2 Tbsp bread crumbs
  • 1 Tbsp olive oil 
  • Salt 

Method


  1. Fry the onion with oil until translucent
  2. Throw all ingredients into a blender and blend until smooth
  3. Pour over the cooked pasta and place in an oven dish
  4. For the parmesan, place the cashews, breadcrumbs, nutritional yeast, salt and oil in a food processor or roughly chop to combine. You do not want this to be too fine. 
  5. Top the mac n cheese with parmesan and place under the grill for 5 – 8 minutes. 
  6. Serve with fresh basil and voila
