Gelatinisation is simply the process of removing starch from the maca root, which produces a more concentrated powder that is easier to digest and absorb, and activates other beneficial nutrients. Faithful to Nature stocks other maca root products which are gelatinised, and I would recommend looking into purchasing one of these instead. In terms of my experience taking the product - I have noticed no effect at maximum dose (three capsules).
