Garlic-Infused Olive Oil:
- ½ cup whole garlic cloves, peeled
- Juice from ¼ organic lime
- 1½ cups Prince Albert Extra Virgin Olive Oil
- Combine the garlic cloves in a bowl with the lime juice. Stir & let sit for 15 minutes.
- Preheat oven to 325°F.
- Drain the lime juice from the cloves & set it aside for later.
- Spread the garlic cloves out in one layer in a small baking dish.
- Pour enough olive oil over the garlic to completely cover the cloves.
- Roast in a hot oven for 30-45 minutes.
- Remove from the oven & let cool (the cloves will darken as they cool down).
- Scoop the cloves out of the oil into a bowl using a slotted spoon.
- Pour the reserved lime juice over the cloves with ½ cup of the olive oil; stir to combine.
- Strain the oil into a clean glass bottle. You can use the left-over garlic cloves in other recipes that call for roasted garlic.
- Seal the bottle with a lid or cork, then store in the refrigerator. Use within 10-14 days.
