Xanthan gum is by it's nature gluten free. It can be used in low gluten and gluten free baking to improve the elasticity of the dough, add volume to baked products and to improve their texture.

I add a teaspoon of this to my cinnamon bun filling and it stops the filling from oozing out as it bakes. Brilliant!

It does make the gel slightly gooey, but I did expect it.

do you know that xanthan gum is not a natural product by is produced exclusively in factory conditions by fermentation via bacteria
