Xanthan gum is by it's nature gluten free. It can be used in low gluten and gluten free baking to improve the elasticity of the dough, add volume to baked products and to improve their texture.

Great for gluten free baking, a little goes a long way.

I used the gum in making a creamy shower gel. Worked very well.
It does make the gel slightly gooey, but I did expect it.

do you know that xanthan gum is not a natural product by is produced exclusively in factory conditions by fermentation via bacteria

Useful addition for your gluten free baking cupboard. Cheap and you don't really need to use too much for each bake.
