Waterkloof Wines
Paul Boutinot searched for a vineyard where he could produce fine wine that had a true sense of its origins – Honest Wines - and found the perfect spot: the windswept Schapenberg slopes near Stellenbosch. They began their conversion to a fully-fledged Biodynamic farm in 2008 and now you can enjoy Demeter Certified wine that has been produced using natural biodynamic methods, free of chemicals and pesticides.
Waterkloof wines are produced with the romance of old world methods, using natural biodynamic preparations and keeping their soils healthy by using plant extracts, fungi and bacteria from their own organic compost. Their grapes are hand-picked and transported with horses, then whole bunch crushed, allowing their natural wild yeast to ferment with minimal intervention, just a touch of filtering and some added sulphur at the end as a preservative.
