  • Bake your own tasty English muffins that are Paleo and Banting diet friendly
  • No preservatives, additives or artificial flavours
  • Almond, coconut and flax meal
  • Gluten-free

You will need to add:

  • 4 free-range eggs
  • 2 tablespoons coconut oil
  • 120ml water
  • A grinding of black pepper, a pinch of paprika and a pinch of mustard (optional)


  • Preheat oven to 180°C
  • Prepare a muffin baking tray with 6 paper cup linings or butter
  • Whisk eggs and mix the coconut oil and water in
  • Add to the premix and whisk until there are no lumps
  • Bake for about 15 minutes
  • Allow to cool, and serve

I baked this last night. The one thing I had against it is that one does need to add a bit more water to it in order to be able to mix it properly. Also the recipe should say, add warm water, as this will help melt the coconut oil that you need to put in. Otherwise, these muffins taste just like bran muffins. They are way more filling than your normal wheat muffins, so even though it is more expensive, you can make a freeze them for future use. I found that you can make them into little balls and then bake them, turns out really nicely that way, especially if you are a little OCD and need things to be neat and tidy. I will be buying this again and tweaking it slightly to add more flavour, as without some butter or marg they are a bit bland.
