Directions:
Vegan Molasses Bran Muffins Recipe:
What you’ll need:- 1 cup of Molasses Bran
- 2 cups Almond Flour
- ¾ cup of Organic Coconut Sugar
- 1 heaped teaspoon of Baking Soda
- ¼ teaspoon of Salt
- 1 cup of your favourite Milk Alternative
- ¼ cup of Vegetable Oil
- 1 tablespoon Apple Cider Vinegar
- 1 teaspoon Vanilla Extract
- 1 Chia Seed Egg see how to make one here
Instructions:
- Preheat your oven to 180°C
- Mix almond flour, molasses bran, coconut blossom sugar, baking soda, and salt together in a large mixing bowl.
- Prepare your chia egg
- Fold your favourite milk alternative, chia egg, vinegar, oil, and vanilla into the dry ingredients
- Hand whisk to remove lumps
- Grease your muffin tray with coconut butter
- Evenly divide the batter into your muffin tray
- Bake for 30 minutes
