Soya Mince Curry
- 250g Soya mince
- 2 garlic cloves chopped
- 2 chillies chopped (or chilli powder added to desired strength)
- ½ tsp paprika
- 1 medium onion chopped
- 1 tbsp ground cumin
- 1 tbsp tomato paste/puree
- 1 red pepper finely sliced
- Olive oil for frying
Fry onion, garlic and chilli in olive oil for 1 minute and add soya, frying until soya turns brown.
Add salt, cumin, paprika and mix well.
Tip in tomato pasta with two cups of water and simmer for 4-5 minutes stirring occasionally.
Add peppers and cook until tender.
Texturised vegetable protein.
