A kombucha scoby (symbiotic community of bacteria and yeast) (also known as a starter culture, mother or mushroom) is used to make Kombucha, a lightly effervescent fermented drink of sweetened black and/or green tea that is used as a functional food with a host of probiotic goodness.

A Kombucha scoby is approximately 5-8cm in diameter. They will grow into the form of the fermentation vessel in which they are placed.

Our Kombucha Scobies;

  • Are shipped dehydrated
  • Are reusable and will keep on growing indefinitely!
  • Cultures on the kitchen counter top at 20°-30°C.
  • Are cultured with sweetened tea.

Followed all instructions EXACTLY (ie. Scoby kept in cool, dark place until the weather got warm enough to make Kombucha; used spring water; used plain black tea and made sure that no liquid was too hot for the Scoby), but this Scoby failed to even start!! I checked it regularly and made sure it had the conditions that it needed, but it remained the same size and did not make any Kombucha. Spent R250 on a dead Scoby. VERY DISAPPOINTED!!

I made a started batch as instructed by the leaflet (Then afterwards I saw on the internet that vinegar must not be used, but rather kombucha tea). After about 4months and leaving a batch for 1.5 weeks, mold started to grow on the tea. When I troubleshooted I saw that when using a dehydrated scoby the living things that protect from mold are too weak from dehydration to protect the Kombucha. So this is a common occurrence with dehydrated and refrigerated kombucha scobies. So I'm very disappointed to say the least.

Bought as a gift for the husband who is crazy about kombucha - now he's decided he cant drink green tea - thats the next challenge - to find out how to make kombucha without green tea!

My scoby is still dehydrating. Have been checking it and it looks good so hopefully will be able to make Kombucha shortly.

After weeks the scoby is still dehydrated. Instructions were followed to the tee.
Maybe it is a summer product requiring warmer weather. Just not working for me.

My friend and I both purchased this kit. We followed instructions to the letter, and weeks later, we both still had a dehydrated scoby. When we contacted the supplier, we were told to leave it in a bit longer, which we did. If that did not work, we had to place them in a new batch of tea, which we did . Unfortunately, none of ours rehydrated and we both threw out our batches. We wasted our money :(

Kombucha is something I have wanted to try out for ages, but it looked so difficult. It turns out it is actually extremely simple. I have loved cultivating my own juice. Amazing.
