This traditional sweet treat consists of deep-fried plaited dough, soaked in a ginger and cinnamon spiced sugar syrup &#8211; heavenly!<\/p>\n\n\n\n<p><strong>INGREDIENTS<\/strong><\/p>\n\n\n\n<p>For the syrup:<\/p>\n\n\n\n<p>530ml water<\/p>\n\n\n\n<p>800g <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/sugars-sweeteners\/natura-brown-cane-sugar\" rel=\"noreferrer noopener\" target=\"_blank\">sugar<\/a><\/p>\n\n\n\n<p><a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/herbs-spices-seasoning\/salt-pepper\/oryx-desert-salt-fine\" rel=\"noreferrer noopener\" target=\"_blank\">Pinch of salt<\/a><\/p>\n\n\n\n<p>2 \u00bd tsp cream of tartar<\/p>\n\n\n\n<p>1 tsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/khoisan-organic-ginger-powder\" rel=\"noreferrer noopener\" target=\"_blank\">ginger<\/a><\/p>\n\n\n\n<p>1 tbsp lemon juice<\/p>\n\n\n\n<p>1 <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/herbs-spices-seasoning\/herbs-spices\/kalyan-organic-whole-cinnamon-sticks\" rel=\"noreferrer noopener\" target=\"_blank\">cinnamon stick<\/a><\/p>\n\n\n\n<p><strong>For the dough:<\/strong><\/p>\n\n\n\n<p>300g <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/baking\/flours\/komati-g-f-flour-self-raising-500g\" rel=\"noreferrer noopener\" target=\"_blank\">self-raising flour<\/a><\/p>\n\n\n\n<p>200g corn flour<\/p>\n\n\n\n<p><a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/herbs-spices-seasoning\/salt-pepper\/oryx-desert-salt-fine\" rel=\"noreferrer noopener\" target=\"_blank\">Pinch of salt<\/a><\/p>\n\n\n\n<p>50g unsalted butter<\/p>\n\n\n\n<p>25g <a href=\"https:\/\/www.faithful-to-nature.co.za\/baking-powder-gluten-free-aluminium-free\" rel=\"noreferrer noopener\" target=\"_blank\">baking powder<\/a><\/p>\n\n\n\n<p>1\\4 cup <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/sugars-sweeteners\/natura-brown-cane-sugar\" rel=\"noreferrer noopener\" target=\"_blank\">sugar<\/a><\/p>\n\n\n\n<p>200ml milk<\/p>\n\n\n\n<p>50ml cream<\/p>\n\n\n\n<p>2 eggs<\/p>\n\n\n\n<p>Oil for frying<\/p>\n\n\n\n<p><strong>METHOD<\/strong><\/p>\n\n\n\n<p>For the syrup: <strong>(for best results, make the syrup a day before)<\/strong><\/p>\n\n\n\n<ol>\n<li>In a pan, heat the water. Add the sugar, salt, cream of tartar, ginger, lemon juice and cinnamon stick.<\/li>\n\n\n\n<li>Bring to the boil, then reduce to a simmer.<\/li>\n\n\n\n<li>Stir occasionally and let the sauce simmer uncovered for 10 minutes.<\/li>\n\n\n\n<li>Take off the heat and allow to cool, then place in the fridge overnight.<\/li>\n<\/ol>\n\n\n\n<p>For the dough:<\/p>\n\n\n\n<ol>\n<li>Sift the dry ingredients in a bowl and mix them together.<\/li>\n\n\n\n<li>Add the milk, butter, eggs and cream, mixing it all together.<\/li>\n\n\n\n<li>Knead the dough on a floured surface for about 20 minutes.<\/li>\n\n\n\n<li>Cover with a damp cloth and let it rest for 30 minutes.<\/li>\n\n\n\n<li>On a floured surface, roll the dough out (about 1 cm thick)<\/li>\n\n\n\n<li>Cut into strips, thin strips and then short strips.<\/li>\n\n\n\n<li>To plait, tuck three strands together at the top. Fold the outer strips over into the middle, repeating until you reach the end and tuck them together.<\/li>\n<\/ol>\n\n\n\n<p>To fry:<\/p>\n\n\n\n<ol>\n<li>Before frying, place the bowl of syrup in a larger bowl of ice to keep it well chilled.<\/li>\n\n\n\n<li>Heat half a pot of oil to 180\u00b0C.<\/li>\n\n\n\n<li>Deep fry 2 koeksisters at a time. When golden, transfer to the syrup using a slotted spoon, draining off as much oil as you can. Leave to soak in the syrup for a while.<\/li>\n\n\n\n<li>Transfer the koeksisters to a cooling rack. Cool completely before eating.<\/li>\n<\/ol>\n\n\n\n<p>And voil\u00e0!
