{"id":73102,"date":"2021-09-03T14:45:52","date_gmt":"2021-09-03T12:45:52","guid":{"rendered":"https:\/\/www.faithful-to-nature.co.za\/blog\/?p=73102"},"modified":"2024-10-11T15:39:06","modified_gmt":"2024-10-11T13:39:06","slug":"plant-based-milks-soy-oat-nuts","status":"publish","type":"post","link":"https:\/\/www.faithful-to-nature.co.za\/blog\/plant-based-milks-soy-oat-nuts\/","title":{"rendered":"Battle of Plant-based Milks: Soy vs Oat vs Nuts"},"content":{"rendered":"\n<p class=\"has-drop-cap\">There are plenty of&nbsp;<a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\" rel=\"noreferrer noopener\" target=\"_blank\">non-dairy milks<\/a>&nbsp;out there. So many, in fact, that it can be hard to know which one is best. One thing is clear though: all milk alternatives are better for the planet than the udder one.<\/p>\n\n\n\n<p>A&nbsp;<a href=\"https:\/\/science.sciencemag.org\/content\/360\/6392\/987\" rel=\"noreferrer noopener\" target=\"_blank\">2018 study<\/a>&nbsp;by researchers at the University of Oxford showed that producing a glass of dairy milk results in almost three times more greenhouse gas emissions than any plant-based milk and it consumes nine times more land than any of the <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\" rel=\"noreferrer noopener\" target=\"_blank\">milk alternatives<\/a>. (Land is required to pasture the cows and grow their feed, which the animals belch out in the form of methane.) Water is also an issue: to produce one litre of dairy requires 600L more water than one litre of soy.&nbsp;<\/p>\n\n\n\n<p>Some brands simply add water to the plant matter, but many others will add various fats (like canola oil) to enhance the mouthfeel, as well as thickening, emulsifying, and binding agents (like xanthan gum, carrageenan, or sunflower lecithin) to smoothen the texture and keep the mixture from separating.<\/p>\n\n\n\n<p>Keep in mind that not all plant milks are as all-purpose as dairy milk, and some are much better suited for, say, whipping up a latte or making a savoury soup base than others. (For instance, coconut milk would make for a strange cream of broccoli soup, while rice milk is pretty watery for a coffee creamer.)<\/p>\n\n\n\n<p><strong><a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/almond-milk\" rel=\"noreferrer noopener\" target=\"_blank\">Almond Milk: Tasty But Questionable<\/a><\/strong><\/p>\n\n\n\n<p>Made from ground almonds and filtered water, <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/almond-milk\/buttanutt-almond-milk-1-litre-bottle\" rel=\"noreferrer noopener\" target=\"_blank\">almond milk<\/a> is one of the most popular non-dairy milks. That might be thanks in part to its inoffensiveness, in taste and texture. Thin but not watery and with a mild and neutral flavour, <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/almond-milk\/milklab-almond-milk\" rel=\"noreferrer noopener\" target=\"_blank\">almond milk<\/a> is pretty versatile. It works well as a good background ingredient in things like smoothies, lattes and lighter sauces. And it has low calories and the highest calcium content of all the plant-based milks.&nbsp;<\/p>\n\n\n\n<p>Almonds have, however, one of the largest environmental impacts. They require more water than any other dairy alternative, consuming 60L of water to produce a single glass of <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/almond-milk\/almond-breeze-unsweetened-almond-milk\" rel=\"noreferrer noopener\" target=\"_blank\">almond milk<\/a>, according to the Oxford study. Recent reports suggest they are also placing unsustainable pressures on US commercial beekeepers.&nbsp;<a href=\"https:\/\/www.theguardian.com\/environment\/2020\/jan\/07\/honeybees-deaths-almonds-hives-aoe\" rel=\"noreferrer noopener\" target=\"_blank\">Nearly 70% of commercial bees<\/a>&nbsp;in the US are drafted every spring to pollinate almonds. Last year, a record number \u2013 over one-third of them \u2013 died by season\u2019s end as a result of these pressures and other environmental threats.<\/p>\n\n\n\n<p><strong><a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/soya-milk\" rel=\"noreferrer noopener\" target=\"_blank\">Soy Milk: Good For Protein<\/a><\/strong><\/p>\n\n\n\n<p>According to the Oxford study, <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/soya-milk\/milklab-soy-milk\" rel=\"noreferrer noopener\" target=\"_blank\">soy milk<\/a> is the joint winner on the sustainability scale. Plus, it has the highest protein content of all <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\" rel=\"noreferrer noopener\" target=\"_blank\">plant-based milk alternatives<\/a>. And is also a good source of calcium (when fortified) and potassium. It was the go-to alternative long before almond milk came into vogue \u2013 but then soy fell out of favour.<\/p>\n\n\n\n<p><a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/soya-milk\/okja-soy-milk\" rel=\"noreferrer noopener\" target=\"_blank\">Soy milk<\/a> has a nice, silky smooth texture. But plain, unsweetened soy milk has a taste that many people find less than palatable on its own. That\u2019s why, when it comes to cooking with plain soy milk, it\u2019s often best suited for dishes with other strong flavour elements\u2014lots of garlic or spice\u2014that will overpower the soy.&nbsp;<\/p>\n\n\n\n<p>Some people hold issue with soy because it has a relatively high concentration of certain hormones that are similar to human hormones \u2013 but you\u2019d have to consume an impossibly large amount for that to ever be a problem. It\u2019s recommended to always opt for organic to avoid GMOs.<\/p>\n\n\n\n<p><strong><a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/oat-milk\" rel=\"noreferrer noopener\" target=\"_blank\">Oat Milk: The Smart Choice<\/a><\/strong><\/p>\n\n\n\n<p><a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/oat-milk\/bottle-buttanutt-oat-milk-1-litre-bottle\" rel=\"noreferrer noopener\" target=\"_blank\">Oat milk<\/a> performs very well on all sustainability metrics. And experts doubt there will be unintended environmental consequences that might emerge when the scale of oat milk use gets larger.<\/p>\n\n\n\n<p>Nutritionally, <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/oat-milk\/okja-oat-milk\" rel=\"noreferrer noopener\" target=\"_blank\">oat milk<\/a> also stands out. It\u2019s high in fibre and good for your heart and gut. It\u2019s typically higher in calories, carbs, naturally occurring sugar and fibre than almost all other <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\" rel=\"noreferrer noopener\" target=\"_blank\">non-dairy milks<\/a>, and has a tiny bit more protein than nut milks \u2013 an overall filling combination.<\/p>\n\n\n\n<p>According to Bloomberg Business, retail sales of <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/oat-milk\/minor-figures-barista-organic-oat-milk\" rel=\"noreferrer noopener\" target=\"_blank\">oat milk<\/a> in the US have soared from $4.4m in 2017 to $29m in 2019, surpassing almond milk as the fastest-growing dairy alternative. But unlike almonds, there are already plenty of oats to go around. Almost all of the oat production goes into animal feed, so uses for milk could take a portion of that without affecting total production.&nbsp;<\/p>\n\n\n\n<p>The secret to oat milk\u2019s popularity? It tends to emulsify into hot drinks better than other non-dairy options. Almond milk can separate when you add it to coffee. But <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/oat-milk\/minor-figures-barista-standard-oat-milk\" rel=\"noreferrer noopener\" target=\"_blank\">oat milk<\/a> makes for a silky smooth, creamy hot beverage.&nbsp;<\/p>\n\n\n\n<p><strong><a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/rice-milk\" rel=\"noreferrer noopener\" target=\"_blank\">Rice Milk: Good For Allergies<\/a><\/strong><\/p>\n\n\n\n<p>Rice milk has very little protein or fat, so offers little in the way of nutrition compared with other choices. Environmentally it doesn\u2019t fare that well, either. Rice uses a lot of water and produces more greenhouse gas emissions than any other plant milk. Bacteria breeding in rice paddies pump methane into the atmosphere and large amounts of fertilizer pollute waterways.<\/p>\n\n\n\n<p>It can, however, be a kind of miracle elixir for people with lots of allergies because it\u2019s not made from nuts or soy and is gluten-free. Consistency-wise, <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/rice-milk\/entice-rice-milk-powder\" rel=\"noreferrer noopener\" target=\"_blank\">rice milk<\/a> tends to be the thinnest and wateriest, so is less suitable for coffee. It\u2019s also got a surprisingly distinct taste (sweet and rich) and can be used for cooking and baking.&nbsp;<\/p>\n\n\n\n<p><strong><a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/other-milk-alternatives\" rel=\"noreferrer noopener\" target=\"_blank\">Macadamia Milk: One To Watch<\/a><\/strong><\/p>\n\n\n\n<p><a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/other-milk-alternatives\/buttanutt-macadamia-milk-1-litre\" rel=\"noreferrer noopener\" target=\"_blank\">Macadamia milk<\/a> is still a niche market in South Africa. It\u2019s best suited for desserts and coffee.<\/p>\n\n\n\n<p><strong><a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/coconut-cream-milk\" rel=\"noreferrer noopener\" target=\"_blank\">Coconut Milk: Ideal For Whipping<\/a><\/strong><\/p>\n\n\n\n<p>The \u2018milk of the islands\u2019 is similar to skim milk in terms of calories and is rich in iron, potassium, magnesium, copper, manganese and selenium. It also contains lauric acid, which boosts the immune system and maintains the elasticity of blood vessels. <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/drinks-1\/milk-alternatives\/coconut-cream-milk\/milklab-coconut-milk\" rel=\"noreferrer noopener\" target=\"_blank\">Coconut milk<\/a> is high in saturated fats (and calories), which makes it ideal for cooking and preparing those Thai curries.&nbsp;&nbsp;<\/p>\n\n\n\n<p>It comes in handy too if you\u2019re looking for a fantastic dairy-free whipped cream. The process of making whipped cream is basically the aeration of fat.
