The prefect blend of warming zesty spices and sweetness, to perfect your Banting \/ Paleo muffins. <a href=\"http:\/\/www.faithful-to-nature.co.za\/Good-Life-mid-47-p-1.html\" target=\"_blank\">Good Life spices<\/a> are non-irradiated and pesticide-free.<\/p>\n<hr \/>\n<h2><strong>Method:\u00a0<\/strong><\/h2>\n<ul>\n<li>Preheat the oven to 200\u00b0C.<\/li>\n<li>Prick the sweet potato a few times with a fork. Bake until soft (approx. 1 hour). Set aside until completely cool.<\/li>\n<li>Peel the sweet potato, discard the skin &amp; mash the flesh with a fork.<\/li>\n<li>Whisk the olive oil, almond milk, maple syrup &amp; vanilla into the sweet potato.<\/li>\n<li>In a separate bowl, whisk together the flour, baking powder, bicarbonate of soda, spice &amp; salt.<\/li>\n<li>Fold the dry ingredients into the sweet potato mix.<\/li>\n<li>Line a muffin tin with paper liners &amp; drop a spoonful of batter into each cup.<\/li>\n<li>Bake at 200\u00b0C for 20- 25 minutes; brush the tops of the muffins with the extra maple syrup during the last 5 minutes of baking.<\/li>\n<li>Cool before serving.
