Now here\u2019s a novel way to combine two awesome Christmas crafts; a Christmas cake that\u2019s also a Christmas wreath, adding a truly festive touch to your table. Plus it\u2019s surprisingly healthy, made with no grain or gluten, suitable for vegans and free of processed sugars. Happy baking!<\/p>\n<hr \/>\n<h2><strong>Buckwheat Apple Christmas Wreath Cake<\/strong><\/h2>\n<h2><strong>Ingredients:<\/strong><\/h2>\n<ul>\n<li>1\u00bd cup buckwheat flour<\/li>\n<li>\u00bc cup <a href=\"http:\/\/www.faithful-to-nature.co.za\/Crede-Milled-Flax-Powder-p-3245.html\" target=\"_blank\">flax seed flour<\/a><\/li>\n<li>\u00be cup <a href=\"http:\/\/www.faithful-to-nature.co.za\/Natures-Choice-Gluten-Free-Almond-Flour-p-4281.html\" target=\"_blank\">almond flour<\/a>, sifted<\/li>\n<li>2tsp <a href=\"http:\/\/www.faithful-to-nature.co.za\/Creeds-Gluten-Free-Aluminium-Free-Baking-Powder-p-2901.html\" target=\"_blank\">gluten-free baking powder<\/a><\/li>\n<li>2tsp <a href=\"http:\/\/www.faithful-to-nature.co.za\/Kalyan-Organic-Ground-Cinnamon-p-4537.html\" target=\"_blank\">ground cinnamon<\/a><\/li>\n<li>1tsp <a href=\"http:\/\/www.faithful-to-nature.co.za\/Kalyan-Organic-Ground-Nutmeg-p-4143.html\" target=\"_blank\">ground nutmeg<\/a><\/li>\n<li>1\u00bd cup unsweetened apple sauce<\/li>\n<li>1 cup unsweetened almond milk, mixed with 1tsp <a href=\"http:\/\/www.faithful-to-nature.co.za\/Earth-Products-Organic-Apple-Cider-Vinegar-p-2697.html\" target=\"_blank\">apple cider vinegar<\/a> (makes a \u201cbuttermilk\u201d mix)<\/li>\n<li>Zest &amp; juice of 1 organic lemon<\/li>\n<li>4 large apples, peeled &amp; cored<\/li>\n<li>2 apples sliced<\/li>\n<li>2 apples cut into small chunks<\/li>\n<li>\u00bd cup <a href=\"http:\/\/www.faithful-to-nature.co.za\/By-Nature-Organic-Raisins-p-3655.html\" target=\"_blank\">raisins<\/a><\/li>\n<li>\u00bd cup <a href=\"http:\/\/www.faithful-to-nature.co.za\/By-Nature-Raw-Organic-Pecan-Nuts-p-5743.html\" target=\"_blank\">pecan nuts<\/a><\/li>\n<li>2Tbsp unsweetened shredded coconut<\/li>\n<\/ul>\n<h2><em><strong>Method:<\/strong><\/em><\/h2>\n<ul>\n<li>Preheat the oven to 350\u00b0F. Coat a spring-form ring-shaped pan with coconut oil.<\/li>\n<li>Whisk together the flours, baking powder &amp; spices in a large bowl. Add the lemon zest &amp; mix it with your fingers to release the lemon flavour.<\/li>\n<li>Add the raisins &amp; pecan nuts; stir until evenly coated &amp; set aside.<\/li>\n<li>Whisk together the wet ingredients (apple sauce &amp; buttermilk) in a large bowl.<\/li>\n<li>Add dry ingredients &amp; stir gently with a wooden spoon or spatula until incorporated.<\/li>\n<li>Fold in the apple chunks.<\/li>\n<li>Pour the batter into your prepared ring pan.<\/li>\n<li>Place the apple slices around the top of the batter. Sprinkle the shredded coconut on top of the apple slices.<\/li>\n<li>Bake for 40-45 minutes.
