If you don\u2019t agree just go watch <a aria-label=\"Fantastic Fungi (opens in a new tab)\" rel=\"noreferrer noopener\" href=\"https:\/\/www.youtube.com\/watch?v=bxABOiay6oA\" target=\"_blank\"><span style=\"text-decoration: underline;\">Fantastic Fungi<\/span><\/a> and have your mind blown. All mushrooms promote neurogenesis \u2013 the growth of new neurons in the brain. Some a little and some a lot and the plethora of other goodness they bring to the body is incredible. You can consume mushrooms in all forms now and a really popular way is in tablet form \u2013 I take a <a aria-label=\"lion\u2019s mane (opens in a new tab)\" rel=\"noreferrer noopener\" href=\"https:\/\/www.faithful-to-nature.co.za\/catalogsearch\/result\/?q=Lion\u2019s+Mane\" target=\"_blank\"><span style=\"text-decoration: underline;\">lion\u2019s mane<\/span><\/a> supplement quite regularly. Another popular way is to put them in powder form into smoothies or hot drinks. I decided to hero the mushroom in a good ol\u2019 burger and chips \u2013 because how great to enjoy the benefits of these incredible health foods in foods we love.<\/p>\n\n\n\n<div style=\"height:22px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">INGREDIENTS<\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Patty&nbsp;<\/strong><\/h4>\n\n\n\n<ul><li>400g <a aria-label=\"black beans (opens in a new tab)\" href=\"https:\/\/www.faithful-to-nature.co.za\/faithful-to-nature-black-beans\" target=\"_blank\" rel=\"noreferrer noopener\">black beans<\/a> \u2013 soaked (4 hours or more), drained, rinsed and dried<\/li><li>\u00bd red onion<\/li><li>1 large garlic clove<\/li><li>\u00bd cup cooked barley<\/li><li>2 sprigs rosemary chopped<\/li><li>\u00bd cup chopped mushrooms \u2013 you can use shitake, button, oyster, chanterelle etc<\/li><li>1 tsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/herbs-spices-seasoning\/salt-pepper\" target=\"_blank\" rel=\"noreferrer noopener\"><span style=\"text-decoration: underline;\">black pepper<\/span><\/a><\/li><li>2 tsp <a aria-label=\"mustard (opens in a new tab)\" rel=\"noreferrer noopener\" href=\"https:\/\/www.faithful-to-nature.co.za\/spicy-bulldog-original-mustard\" target=\"_blank\"><span style=\"text-decoration: underline;\">mustard<\/span><\/a><\/li><li>\u00bd tsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/herbs-spices-seasoning\/salt-pepper\" target=\"_blank\" rel=\"noreferrer noopener\">salt<\/a><\/li><li>1 TBS <a aria-label=\"flaxmeal (opens in a new tab)\" rel=\"noreferrer noopener\" href=\"https:\/\/www.faithful-to-nature.co.za\/crede-flax-flour\" target=\"_blank\"><span style=\"text-decoration: underline;\">flaxmeal<\/span><\/a><\/li><li>Brown mushroom buns<\/li><li>8 x large brown mushrooms<\/li><li><a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/oil-vinegar\/olive-oil?manufacturer%5B0%5D=Faithful+to+Nature\" target=\"_blank\" rel=\"noreferrer noopener\"><span style=\"text-decoration: underline;\">Olive oil<\/span><\/a><\/li><\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Reishi Salted rosemary straw fries<\/strong><\/h4>\n\n\n\n<ul><li>2 x large potatoes<\/li><li>2 tsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/herbs-spices-seasoning\/salt-pepper\" target=\"_blank\" rel=\"noreferrer noopener\"><span style=\"text-decoration: underline;\">salt<\/span><\/a><\/li><li>1 tsp <a aria-label=\"reishi powder (opens in a new tab)\" rel=\"noreferrer noopener\" href=\"https:\/\/www.faithful-to-nature.co.za\/soaring-free-organic-reishi-powder-potent-plants\" target=\"_blank\"><span style=\"text-decoration: underline;\">reishi powder<\/span><\/a><\/li><li>1 sprig rosemary (+- 2 TBS)<\/li><li>2 tsp lemon zest<\/li><\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<div style=\"height:23px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Method<\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<div style=\"height:22px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ol><li>Preheat the oven to 180C, coat the brown mushrooms in olive oil and bake in the oven until cooked. About 8 minutes.<\/li><\/ol>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h4 class=\"wp-block-heading\">For The Patties<\/h4>\n\n\n\n<ol><li>Pop half the barley and all the rest of the ingredients into a food processor and blend until nicely combined. Add the rest of the barley and pulse to mix in.<\/li><li>Divide into 4 and form into patties. Lightly fry in a pan until dark and crispy on each side.<\/li><li>If you feel like they are too wet you can add in some cake flour or GF flour to firm them up.<\/li><li>Serving suggestion: You can place some baby spinach on 4 of the brown mushrooms with slices of tomato, pickles and roast pepper.<\/li><\/ol>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h4 class=\"wp-block-heading\">For The Fries<\/h4>\n\n\n\n<ol><li>Heat a pot of oil on the stove.<\/li><li>Cut the potatoes into thin batons \u2013 just thicker than a matchstick and the full length of the potato.<\/li><li>Pat dry on some paper towel and mix with the rosemary sprigs. Place 1 fry in the oil to check if it is hot enough \u2013 it should immediately bubble and rise to the top.<\/li><li>Fry the chips with the rosemary until golden brown and crispy.&nbsp;<\/li><li>In a little bowl mix the reishi, lemon zest and salt.
