{"id":62922,"date":"2020-12-28T15:44:04","date_gmt":"2020-12-28T13:44:04","guid":{"rendered":"https:\/\/www.faithful-to-nature.co.za\/blog\/?p=62922"},"modified":"2021-11-18T20:17:47","modified_gmt":"2021-11-18T18:17:47","slug":"cashew-nut-cream-and-mushroom-wellington","status":"publish","type":"post","link":"https:\/\/www.faithful-to-nature.co.za\/blog\/cashew-nut-cream-and-mushroom-wellington\/","title":{"rendered":"Mushroom Wellington: A Cashew Nut Cream Christmas"},"content":{"rendered":"\n<p class=\"has-text-align-left\">Get festive in the kitchen with this mushroom wellington delight, made to make all your alternative food dreams come true.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Ingredients<\/strong><\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<ul><li>1 cup <a rel=\"noreferrer noopener\" href=\"https:\/\/www.faithful-to-nature.co.za\/faithful-to-nature-cashew-nuts-unsalted\" target=\"_blank\"><span style=\"text-decoration: underline;\">cashews<\/span><\/a> soaked over night<\/li><li>250g button mushrooms diced<\/li><li>2 cloves garlic grated<\/li><li>1 onion finely chopped<\/li><li>2 tsp thyme leaves<\/li><li>\u00bd tsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/herbs-spices-seasoning\/salt-pepper?manufacturer%5B0%5D=Faithful+to+Nature\" target=\"_blank\" rel=\"noreferrer noopener\"><span style=\"text-decoration: underline;\">salt<\/span><\/a><\/li><li>4 large brown\/Portobello mushrooms<\/li><li>2 TBS <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/condiments-and-sauces\/soy-sauce-tamari\" target=\"_blank\" rel=\"noreferrer noopener\">soy \/tamari sauce<\/a><\/li><li>Puff pastry<\/li><li>\u00bc cup agua faba (<a aria-label=\"chickpea brine) (opens in a new tab)\" href=\"https:\/\/www.faithful-to-nature.co.za\/clearspring-demeter-organic-chickpeas-350-g\" target=\"_blank\" rel=\"noreferrer noopener\"><span style=\"text-decoration: underline;\">chickpea brine)<\/span><\/a><\/li><\/ul>\n\n\n\n<div style=\"height:45px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">The Mushroom Wellington <strong>Method<\/strong><\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<ol><li>Drain and place the cashews in a blender and add in \u00bc cup water. Blend until extremely smooth \u2013 the same consistency as cream.<\/li><li>In a pan sweat the onion and garlic until translucent then add in the button mushrooms and fry. Add in the cashew cream, salt and thyme. Cook until it makes a thick paste.<\/li><li>In another pan fry the large\/Portobello mushrooms in the soy sauce for a few minutes. Make sure they are still firm and not floppy.<\/li><li>Roll out your puff pastry and use a rolling pin to make it evenly thin all over. Cut out a piece of pastry that is 3cms larger than the large mushroom. Place a table spoon of the mushroom and cashew cream in the centre of the pastry and smear around, keeping 3 cms of pastry without the cream so that you&#8217;re able to stick to the puff party lid onto the pie. Place the large mushroom on top of the cream, then add another table spoon of mushroom cream on top.\u00a0<\/li><li>Place puff pastry on top and squeeze down pastry into the other and close up with a fork.<\/li><li>Poke holes into the top of the pastry and run a knife in a criss cross pattern along the top of the pie so that when it bakes you will see a beautiful grid pattern on top.\u00a0<\/li><li>Brush the aqua faba on top of the pastry.<\/li><li>When ready to serve bake the pie until the puff pastry is brown and crispy &#8211; enjoy your mushroom wellington!<\/li><\/ol>\n\n\n\n<div style=\"height:100px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<figure class=\"wp-block-image size-full\"><a href=\"https:\/\/www.faithful-to-nature.co.za\/food?manufacturer%5B0%5D=Faithful+to+Nature&amp;utm_source=ftnblog&amp;utm_medium=banner&amp;utm_campaign=ftnpantry\"><img decoding=\"async\" src=\"https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/blogbanner-ftnpantryrange-1.jpg\" alt=\"\" class=\"wp-image-75463\"\/><\/a><\/figure>\n","protected":false},"excerpt":{"rendered":"<p>Get festive in the kitchen with this mushroom wellington delight, made to make all your alternative food dreams come true.
