Add your vanilla extract and mix once more for good luck to combine it.<\/strong><\/li><li><strong>Add the icing sugar in 2 parts &#8211; mixing until it\u2019s all combined and fluffy. <\/strong><\/li><li><strong>Scrape down the sides if needed. Use your offset spatula to spread the icing over the top of the cake, making sure it is flat and even. Push  excess icing towards the edges, allowing them to overhang slightly.  <\/strong><\/li><li> <strong>Starting with any icing that hangs off the top edge of the cake, begin evening out the icing on the sides of the cake. Add more icing as needed. Once your cake is iced, place it in the fridge to firm up while you mix your colours for decorating. Place a few scoops of icing into 3 cups. Add colouring a little at a time, until you reach your desired colour. Using the offset spatula, smooth small amounts of each colour in different directions onto the cake. It is better to alternate between colours to ensure there is a balance.
