Go grab a few fresh punnets of strawberries, fire up your food processor, and try out this sweet indulgence. Perfect for your next Spring picnic.<!--more--><\/p>\n<h2><strong><em>Ingredients<\/em><\/strong><\/h2>\n<h3><em><strong>The Crust:<\/strong><\/em><\/h3>\n<ul>\n<li>1 cup <a href=\"http:\/\/www.faithful-to-nature.co.za\/Earth-Products-Organic-Pecan-Pieces-p-2393.html\" target=\"_blank\" rel=\"noopener\">pecan nuts<\/a><\/li>\n<li>1 cup <a href=\"http:\/\/www.faithful-to-nature.co.za\/By-Nature-Organic-Almonds-p-3085.html\" target=\"_blank\" rel=\"noopener\">almonds<\/a><\/li>\n<li>\u00bctsp salt<\/li>\n<li>4 medjool dates, pitted and chopped<\/li>\n<\/ul>\n<p>This delicious raw cake base should actually be perfect with any fruity cheesecake filling and topping recipe you want to try!<\/p>\n<h3><strong><em>The Cake: <\/em><\/strong><\/h3>\n<ul>\n<li>3 cups <a href=\"http:\/\/www.faithful-to-nature.co.za\/Komati-Non-Organic-Raw-Cashew-Nuts-p-3702.html\" target=\"_blank\" rel=\"noopener\">raw cashews<\/a>, soaked overnight &amp; roughly chopped<\/li>\n<li>\u00bd cup agave syrup or <a href=\"http:\/\/www.faithful-to-nature.co.za\/Superfoods-Organic-Coconut-Nectar-p-5664.html\" target=\"_blank\" rel=\"noopener\">coconut nectar<\/a><\/li>\n<li>\u00bc cup water<\/li>\n<li>\u00bc cup fresh lime juice<\/li>\n<li>1tsp <a href=\"http:\/\/www.faithful-to-nature.co.za\/Nielsen-Massey-Organic-Madagascar-Bourbon-Vanilla-Extract-p-4789.html\" target=\"_blank\" rel=\"noopener\">vanilla extract<\/a><\/li>\n<li>4 cups (32oz.) fresh ripe strawberries hulled &amp; halved<\/li>\n<li>\u00be cup <a href=\"http:\/\/www.faithful-to-nature.co.za\/Crede-Organic-Virgin-Coconut-Oil-p-540.html\" target=\"_blank\" rel=\"noopener\">coconut oil<\/a>, melted<\/li>\n<\/ul>\n<h3><\/h3>\n<h3><strong><em>The Frosting:<\/em><\/strong><\/h3>\n<ul>\n<li>\u00bd cup raw cashews, soaked overnight &amp; roughly chopped<\/li>\n<li>\u00bd cup water<\/li>\n<li>2Tbsp agave or coconut nectar<\/li>\n<li>\u00bdtsp vanilla extract<\/li>\n<li>\u00bc cup raw coconut oil, melted<\/li>\n<\/ul>\n<h3><\/h3>\n<h3><strong><em>The Strawberry Sauce:<\/em><\/strong><\/h3>\n<ul>\n<li>2 cups chopped strawberries<\/li>\n<li>3Tbsp agave or coconut nectar<\/li>\n<li>Set 8 or 9 extra strawberries aside for the topping<\/li>\n<\/ul>\n<h2><\/h2>\n<h2><strong><em>Method<\/em><\/strong><\/h2>\n<h3><strong><em>The Crust:<\/em><\/strong><\/h3>\n<ul>\n<li>Lightly grease a spring-form cheesecake pan with coconut oil.<\/li>\n<li>Pulse the pecans, almonds &amp; salt in a food processor until you have fine crumbs.<\/li>\n<li>Add the dates &amp; pulse, until you have a dough that holds together when you squeeze it between your fingers.<\/li>\n<li>Firmly press the dough into the bottom of your prepared pan.<\/li>\n<\/ul>\n<h3><\/h3>\n<h3><strong><em>The Cake:<\/em><\/strong><\/h3>\n<ul>\n<li>Pulse the cashews in your food processor until crumbly. Add the agave, water, lime juice &amp; vanilla; pur\u00e9e until the mixture is very smooth.<\/li>\n<li>Add the strawberries through the top of the food processor &amp; pur\u00e9e until the mixture turns pink. Add the melted coconut oil in a steady stream while you keep blending.<\/li>\n<li>Pour the filling into the cake pan; it will have the consistency of a smoothie before it sets. Cover with plastic wrap &amp; place in the fridge for at least 4 hours.<\/li>\n<\/ul>\n<h3><\/h3>\n<h3><strong><em>The Frosting:<\/em><\/strong><\/h3>\n<ul>\n<li>Pulse the cashews until crumbly. Add the water, agave &amp; vanilla and blend until smooth.<\/li>\n<li>Stream in the coconut oil until combined. Pour into a bowl &amp; cover with plastic wrap.<\/li>\n<li>Chill for about 2 hours.<\/li>\n<\/ul>\n<h3><\/h3>\n<h3><strong><em>The Strawberry Sauce:<\/em><\/strong><\/h3>\n<ul>\n<li>Ideally you should prepare the topping sauce close to serving time. Simply mash the fresh strawberries &amp; agave until you have a sweet red syrupy mixture.<\/li>\n<\/ul>\n<h3><\/h3>\n<h3><strong><em>Put it All Together!<\/em><\/strong><\/h3>\n<ul>\n<li>Remove the cake from the pan.<\/li>\n<li>Place several even dollops of frosting around the cake\u2019s perimeter &amp; one in the centre.<\/li>\n<li>Slice the tops off the 8 or 9 strawberries you set aside; place them upside-down into the frosting mounds.<\/li>\n<li>Drizzle each slice of cake with strawberry sauce, serve &amp; enjoy!<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><em>Recipe adapted from <a href=\"http:\/\/www.theppk.com\/\" target=\"_blank\" rel=\"noopener\">The Post-Punk Kitchen<\/a>.
