Add 1tsp coconut oil for 39 extra calories.<\/em><\/p>\n<h3>Ingredients:<\/h3>\n<ul>\n<li>3 egg whites<\/li>\n<li>\u00bdcup spinach<\/li>\n<li>\u00bdcup onion, chopped<\/li>\n<li>4 or 5 grape tomatoes<\/li>\n<li>Salt &amp; pepper to taste<\/li>\n<\/ul>\n<h3><\/h3>\n<h3>Method:<\/h3>\n<ul>\n<li>Preheat oven to 400\u00b0F.<\/li>\n<li>Saut\u00e9 the onion in a <a href=\"http:\/\/www.faithful-to-nature.co.za\/Sola-Green-Cooking-20cm-Frying-Pan-p-5025.html\" target=\"_blank\">non-stick pan<\/a> until translucent (3-4min).<\/li>\n<li>Add spinach &amp; saut\u00e9 until slightly wilted.<\/li>\n<li>Place mixture in a small glass dish &amp; add the 3 egg whites.<\/li>\n<li>Add sliced tomatoes, season with salt &amp; pepper. When the seeds give off a nutty aroma, toss in the aubergines, coating them in the onion &amp; spices.<\/li>\n<li>Add the tomatoes &amp; sugar, cover &amp; gently cook until aubergines are tender (approx. 40min).<\/li>\n<li>Toss in half the mint &amp; coriander.
