Choose whatever protein you\u2019d like, shrimp, chicken or tofu and definitely don\u2019t skip on the tamarind \u2013 if you want the full experience!<\/p>\n<div class=\"ERSIngredients\">\n<div class=\"ERSIngredientsHeader ERSHeading\">Ingredients<\/div>\n<ul>\n<li class=\"ingredient\">2 to 3 medium zucchini<\/li>\n<li class=\"ingredient\">1 to 4 tablespoons\u00a0tamarind paste<\/li>\n<li class=\"ingredient\">3 tablespoons\u00a0fish sauce*<\/li>\n<li class=\"ingredient\">3 tablespoon honey or <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/pantry-1\/sugars-sweeteners\">other sweetener<\/a><em><strong>\u00a0(LEAVE OUT FOR WHOLE 30)<\/strong><\/em><\/li>\n<li class=\"ingredient\">2 tablespoons <a href=\"https:\/\/www.faithful-to-nature.co.za\/tabu-foods-organic-brown-rice-vinegar\" target=\"_blank\" rel=\"noopener\">rice vinegar<\/a><\/li>\n<li class=\"ingredient\">\u00bd teaspoon red pepper flakes, or to taste<\/li>\n<li class=\"ingredient\">3 tablespoons <a href=\"https:\/\/www.faithful-to-nature.co.za\/earth-products-ghee-clarified-butter\" target=\"_blank\" rel=\"noopener\">ghee<\/a> or olive oil<\/li>\n<li class=\"ingredient\">\u00bc cup chopped scallions<\/li>\n<li class=\"ingredient\">2 garlic cloves, minced<\/li>\n<li class=\"ingredient\">2 pasture-raised eggs<\/li>\n<li class=\"ingredient\">4 cups shredded cabbage<\/li>\n<li class=\"ingredient\">1 cup mung bean sprouts<\/li>\n<li class=\"ingredient\">\u00bd pound peeled and deveined wild caught shrimp*<\/li>\n<\/ul>\n<div class=\"ERSSectionHead\"><strong>For Serving:<\/strong><\/div>\n<ul>\n<li class=\"ingredient\">\u00bd cup roasted <a href=\"https:\/\/www.faithful-to-nature.co.za\/faithful-to-nature-peanuts-dry-roasted-300g\" target=\"_blank\" rel=\"noopener\">peanuts<\/a>, chopped (optional)<\/li>\n<li class=\"ingredient\">\u00bc cup chopped fresh cilantro (optional)<\/li>\n<li class=\"ingredient\">2 limes, quartered (optional)<\/li>\n<li class=\"ingredient\">red pepper flakes or thinly sliced hot peppers (optional)<\/li>\n<\/ul>\n<div class=\"ERSClear\"><\/div>\n<\/div>\n<div class=\"ERSInstructions\">\n<div class=\"ERSInstructionsHeader ERSHeading\">Instructions<\/div>\n<ol>\n<li class=\"instruction\">Using your <a href=\"https:\/\/www.faithful-to-nature.co.za\/morphy-richards-spiralizer-express\" target=\"_blank\" rel=\"noopener\">spiralizer<\/a>, <a href=\"https:\/\/www.faithful-to-nature.co.za\/spyra-gyra-spiral-slicer\" target=\"_blank\" rel=\"noopener\">mandoline slicer<\/a>, julienne peeler or other veggie noodle maker, cut your zucchini into noodles. Place into a colander or strainer and sprinkle with sea salt. Allow to sit, sweat and drain while you make your sauce and start the cooking.<img fetchpriority=\"high\" decoding=\"async\" class=\" wp-image-36842 alignright\" src=\"https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/34399426360_ccd36a32ee_c-150x150.jpg\" alt=\"\" width=\"364\" height=\"364\" srcset=\"https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/34399426360_ccd36a32ee_c-150x150.jpg 150w, https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/34399426360_ccd36a32ee_c-440x440.jpg 440w\" sizes=\"(max-width: 364px) 100vw, 364px\" \/><\/li>\n<li class=\"instruction\">Make the Pad Thai Sauce: in a small saucepan, add 1 tablespoon tamarind paste, fish sauce, honey and vinegar in a small saucepan over medium-low heat and bring to barely a simmer. Taste and add more tamarind paste, as needed, if desired. It should have a sharp, pungent flavor, but not unpleasantly sour. You can also adjust the sweetness level, as desired. Stir in red pepper flakes and set aside.<\/li>\n<li class=\"instruction\">Remove the zucchini noodles from the colander or strainer and with a clean kitchen towel or paper towels, gently squeeze as much of the moisture from the noodles, as you can. Set aside.<\/li>\n<li class=\"instruction\">Place the ghee or oil in a large skillet over medium-high heat; when oil shimmers, add the scallions and garlic and cook for about one minute. Add the eggs to pan; once they begin to set, scramble them until just done. Add cabbage and bean sprouts and continue to cook until cabbage begins to wilt, then add shrimp.<\/li>\n<li class=\"instruction\">When shrimp begin to turn pink add the zucchini noodles to pan along with sauce. Toss everything together to coat with tamarind sauce and combine well.
