Full of flavour and festive cheer, if you were ever thinking that you want to give this perfectly on point Christmas baked treat a bash then look no further, this is the recipe for you!<\/p>\n\n\n\n<div style=\"height:54px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>INGREDIENTS:<\/strong><\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<div style=\"height:35px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h4 class=\"wp-block-heading\">FOR THE FILLING:<\/h4>\n\n\n\n<p><em>*Makes 1kg <\/em><\/p>\n\n\n\n<ul><li>50g sultanas<\/li><li>50g <a href=\"https:\/\/www.faithful-to-nature.co.za\/faithful-to-nature-jumbo-raisins\" target=\"_blank\" rel=\"noreferrer noopener\">raisins<\/a><\/li><li>200g <a href=\"https:\/\/www.faithful-to-nature.co.za\/faithful-to-nature-cranberries-250g\" target=\"_blank\" rel=\"noreferrer noopener\">dried cranberries<\/a><\/li><li>200g currants<\/li><li>200g <a href=\"https:\/\/www.faithful-to-nature.co.za\/faithful-to-nature-sayer-dates-pitted\" target=\"_blank\" rel=\"noreferrer noopener\">dried pitted dates<\/a>, diced<\/li><li>200g dried <a href=\"https:\/\/www.faithful-to-nature.co.za\/by-nature-dried-apricots-200g\" target=\"_blank\" rel=\"noreferrer noopener\">apricots<\/a>, diced<\/li><li>400g Granny Smith Apples, cored &amp; finely chopped<\/li><li>4 lemons, juiced &#8211; 2 lemons zested<\/li><li>2 oranges, zested &amp; juiced<\/li><li>1 cup apple juice<\/li><li>1 cup <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/sugars-sweeteners\/syrup?price=136-200\" target=\"_blank\" rel=\"noreferrer noopener\">Maple Syrup<\/a><\/li><li>\u00bd cup <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/oil-vinegar\/coconut-oil?manufacturer%5B0%5D=Faithful+to+Nature\" target=\"_blank\" rel=\"noreferrer noopener\">coconut oil<\/a><\/li><li>1tsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/health-connection-blackstrap-molasses\" target=\"_blank\" rel=\"noopener\">blackstrap molasses<\/a><\/li><li>2tsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/good-life-organic-bengali-5-spice-mix\" target=\"_blank\" rel=\"noreferrer noopener\">mixed spice<\/a> baking blend<\/li><li>1 cup brandy<\/li><li>\u00bd tsp&nbsp;<a href=\"https:\/\/www.faithful-to-nature.co.za\/vanilla-man-vanilla-extract-50ml\" target=\"_blank\" rel=\"noopener\">vanilla extract<\/a><\/li><\/ul>\n\n\n\n<div style=\"height:34px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h4 class=\"wp-block-heading\">FOR THE PASTRY:<\/h4>\n\n\n\n<p><em>*Makes enough for 12 pies<\/em><\/p>\n\n\n\n<ul><li>200g <a href=\"https:\/\/www.faithful-to-nature.co.za\/natures-choice-tapioca-flour\" target=\"_blank\" rel=\"noreferrer noopener\">tapioca flour<\/a><\/li><li>100g <a href=\"https:\/\/www.faithful-to-nature.co.za\/faithful-to-nature-almond-flour-119122\" target=\"_blank\" rel=\"noreferrer noopener\">almond flour<\/a><\/li><li>100g melted <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/oil-vinegar\/coconut-oil?manufacturer%5B0%5D=Faithful+to+Nature\" target=\"_blank\" rel=\"noreferrer noopener\">coconut oil<\/a><\/li><li>80g <a href=\"https:\/\/www.faithful-to-nature.co.za\/faithful-to-nature-organic-coconut-blossom-sugar-fine\" target=\"_blank\" rel=\"noreferrer noopener\">coconut sugar<\/a><\/li><li>2tsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/vanilla-man-vanilla-extract-50ml\" target=\"_blank\" rel=\"noreferrer noopener\">vanilla extract<\/a><\/li><li>80g ice water<\/li><\/ul>\n\n\n\n<div style=\"height:32px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">METHOD:<\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<div style=\"height:36px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h4 class=\"wp-block-heading\">FOR THE FILLING:<\/h4>\n\n\n\n<ol><li>Firstly, zest 2 lemons and 2 oranges, keep aside.<\/li><li>Then, juice all your citrus (4 lemons and 2 oranges) and add both the juice and the zest in a saucepan.<\/li><li>Once juiced, add the brandy, apple juice, baking spice, coconut oil, vanilla, blackstrap molasses and sweetener\u00a0to your saucepan, bring to a boil, remove from heat and add your dried fruit.<\/li><li>After that, add your apples, stir to combine and let cool.<\/li><li>Next, let your mixture cool off before another thorough mix and squish with your hands. This motion assists in the absorption of the delicious syrup mixture into the dried fruit.<\/li><li>Then, store in glass jars or in a sparkling clean container, cover and keep in the pantry\/anywhere that is dark and out of the way.<\/li><li>Finally, to ensure the biggest and best flavour explosion you&#8217;ll want to leave this mixture to mature out of the fridge to soak up all the juices, a minimum of one day will yield the best results.<\/li><\/ol>\n\n\n\n<div style=\"height:31px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h4 class=\"wp-block-heading\">FOR THE PASTRY:<\/h4>\n\n\n\n<ol><li>Firstly, add all your ingredients into a large mixing bowl.<\/li><li>Then, with your hands or a food processor, mix until a rough dough starts forming. <\/li><li>Next, heavily flour a clean and dry surface with tapioca flour, turn your dough onto the floured surface and begin kneading until the dough is smooth and well incorporated.<\/li><li>Now, divide the\u00a0dough into 24 equal parts (to do this form a sausage with the dough and cut into sections using a knife).<\/li><li>Afterwards, using a rolling pin, roll out each segment to about 3mm in thickness.<\/li><li>Then, you can either use cookie cutters or a glass for the next bit, but you will need two sizes; one slightly smaller than the other. Using your cutter of choice cut 12 larger circles (your base) and 12 smaller circles (your lids) from your 24 dough segments.<\/li><li>Last but not least, decorate the smaller circles for a beautiful finish, or you can just leave them as is. This is a big job so we suggest working in stages: prep your larger pieces first as these will form the base, once you&#8217;ve filled your pies create your 12 smaller circles (the lids).<\/li><\/ol>\n\n\n\n<div style=\"height:33px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h4 class=\"wp-block-heading\">ASSEMBLY:<\/h4>\n\n\n\n<ol><li>Preheat your oven to 160\u00baC.
