Let\u2019s be honest, we don\u2019t need an excuse to fill our bellies with this soft and spongy pudding,&nbsp;but what better time feed hungry and happy mouths than over the Festive Season.&nbsp;What Angelique from <a href=\"https:\/\/www.instagram.com\/thegoodroots\/\" target=\"_blank\" rel=\"noreferrer noopener\">The Good Roots<\/a> has done here is create a vegan, gluten-free and refined&nbsp;sugar-free version of an all-time South African Favourite, without sacrificing on any of the taste.<\/p>\n\n\n\n<p>If you don\u2019t like the taste of regular gluten-free flour, a combination of 1\u00be cup <a href=\"https:\/\/www.faithful-to-nature.co.za\/faithful-to-nature-rice-flour-400g\" target=\"_blank\" rel=\"noreferrer noopener\">brown rice flour<\/a> and&nbsp;\u00bc cup <a href=\"https:\/\/www.faithful-to-nature.co.za\/natures-choice-tapioca-flour\" target=\"_blank\" rel=\"noreferrer noopener\">tapioca flour<\/a> is a good gluten-free alternative. If you\u2019re not bothered by gluten-free thing, just&nbsp;use regular all-purpose flour.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">INGREDIENTS<\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Dry<\/h3>\n\n\n\n<ul><li>2 cups (gluten-free) <a href=\"https:\/\/www.faithful-to-nature.co.za\/catalogsearch\/result\/?q=flour\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">all-purpose flour<\/a><\/li><li>\u00be cup <a href=\"https:\/\/www.faithful-to-nature.co.za\/catalogsearch\/result\/?q=coconut+sugar\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">coconut sugar<\/a><\/li><li>1\u00bd tsp baking soda<\/li><li>2 tsp <a rel=\"noreferrer noopener\" href=\"https:\/\/www.faithful-to-nature.co.za\/natures-choice-baking-powder-bio-friendly\" target=\"_blank\">baking powder<\/a><\/li><li>Pinch of salt<\/li><\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Wet<\/h3>\n\n\n\n<ul><li>\u00bd cup full fat <a rel=\"noreferrer noopener\" href=\"https:\/\/www.faithful-to-nature.co.za\/cocomi-coconut-milk-cuisine-17-fat\" target=\"_blank\">coconut milk<\/a> (sub for any plant-based milk or water)<\/li><li>2 tbsp <a rel=\"noreferrer noopener\" href=\"https:\/\/www.faithful-to-nature.co.za\/faithful-to-nature-faithful-to-nature-apple-cider-vinegar-500ml\" target=\"_blank\">apple cider vinegar<\/a><\/li><li>3 tbsp <a rel=\"noreferrer noopener\" href=\"https:\/\/www.faithful-to-nature.co.za\/tierhoek-organic-apricot-jam\" target=\"_blank\">apricot jam<\/a><\/li><li>3 tbsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/catalogsearch\/result\/?q=coconut+oil\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">coconut oil<\/a>, melted<\/li><li>2 tbsp <a rel=\"noreferrer noopener\" href=\"https:\/\/www.faithful-to-nature.co.za\/crede-flax-flour\" target=\"_blank\">flax seed flour<\/a> + 6 tbsp water<\/li><li>2 tbsp <a rel=\"noreferrer noopener\" href=\"https:\/\/www.faithful-to-nature.co.za\/catalogsearch\/result\/?q=liquid+sweetener\" target=\"_blank\">liquid sweetener<\/a> of choice (I used date syrup)<\/li><\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Sauce<\/h3>\n\n\n\n<ul><li>\u00bd cup <a href=\"https:\/\/www.faithful-to-nature.co.za\/catalogsearch\/result\/?q=full+fat+coconut+cream\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">coconut whipping cream<\/a> (substitute \u00bd cup full-fat coconut milk + 1 tbsp coconut oil)<\/li><li>\u00bc cup coconut sugar<\/li><li>1 tbsp apricot jam<\/li><li>1 tsp <a rel=\"noreferrer noopener\" href=\"https:\/\/www.faithful-to-nature.co.za\/vanilla-man-vanilla-extract-50ml\" target=\"_blank\">vanilla extract<\/a><\/li><li>1 tbsp <a rel=\"noreferrer noopener\" href=\"https:\/\/www.faithful-to-nature.co.za\/silan-date-syrup-400g\" target=\"_blank\">date syrup<\/a> (or liquid sweetener of choice)<\/li><li>\u00bc cup hot water<\/li><\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">METHOD<\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<ol><li>Preheat the oven to 180 .<\/li><li>In a large mixing bowl whisk all the dry ingredients together.<\/li><li>In a separate bowl mix the apple cider vinegar into the milk and leave it for 5 minutes (milk<br>separation is normal).<\/li><li>Combine the flax seed flour with water and let it stand for 5 minutes to thicken up. In the<br>meantime, melt the coconut oil and apricot jam together over a low heat.<\/li><li>Now combine all the wet ingredients together and add into dry ingredients. Mix until just combined, don\u2019t overmix.<\/li><li>Scoop your batter into a lined baking dish and bake for 30 \u2013 45 minutes or until golden brown and a fork comes out clean.<\/li><li>While your malva is bubbling away in the oven start with the sauce: in a small saucepan over a medium heat combine all sauce ingredients. Bring to a simmer and continue to stir until the sugar caramelises and starts to thicken up, you\u2019re looking at roughly 5 minutes. If the sauce is too thick by the time the malva comes out of the oven, you can just add a little hot water.<\/li><li>Once the malva comes out of the oven poke the surface with a fork several times to make little holes for the malva to soak up all that delicious gooey sauce. Pour the sauce over and allow it to soak. Mmmmm\u2026 you\u2019re making delicious, sweet vegan magic happen. Store the remaining sauce in the fridge for serving.<\/li><li>Serve straight away while still hot with (vegan) ice cream or custard.
