This recipe can also be used to make regular yoghurt.<\/p>\n<p>The secret to having creamy, thick and tangy yoghurt lies with the\u00a0 ingredients you use and off course\u00a0the right method. <a href=\"https:\/\/www.faithful-to-nature.co.za\/earth-products-agar-powder\" target=\"_blank\" rel=\"noopener\">Agar agar<\/a> (vegan version of gelatine) and <a href=\"https:\/\/www.faithful-to-nature.co.za\/natures-choice-tapioca-flour\" target=\"_blank\" rel=\"noopener\">tapioca starch<\/a> is the best way to thicken\u00a0coconut yoghurt. When making the yoghurt it is crucial that all pans, jars and utensils are clean\u00a0(sterilised in boiling water to be sure) to avoid contaminating the yoghurt with bad bacteria (yes, that\u00a0means no double dipping of your licked spoon).<\/p>\n<p>This recipe is vegan, however just have a look at what probiotic you buy as some do contain a small\u00a0amount of milk proteins (too small to affect lactose-intolerance), as well as if it\u2019s a veggie capsule. The\u00a0<a href=\"https:\/\/www.faithful-to-nature.co.za\/metagenics-ultraflora-balance\" target=\"_blank\" rel=\"noopener\">Metagenics UltraFlora Balance<\/a> I use is a veggie capsule.<\/p>\n<h1>WHAT YOU\u2019LL NEED:<\/h1>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\" wp-image-31526 alignright\" src=\"https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/Coconute-yogurt-1-300x200.jpg\" alt=\"\" width=\"414\" height=\"276\" srcset=\"https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/Coconute-yogurt-1-300x200.jpg 300w, https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/Coconute-yogurt-1-768x512.jpg 768w, https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/Coconute-yogurt-1-610x407.jpg 610w, https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/Coconute-yogurt-1.jpg 1000w\" sizes=\"(max-width: 414px) 100vw, 414px\" \/><\/p>\n<ul>\n<li><a href=\"https:\/\/www.faithful-to-nature.co.za\/ehk-kitchenware-wooden-spoon\" target=\"_blank\" rel=\"noopener\">Wooden spoon<\/a> and <a href=\"https:\/\/www.faithful-to-nature.co.za\/consol-2l-jar\" target=\"_blank\" rel=\"noopener\">glass jar<\/a>, sterilised under boiling water<\/li>\n<li><a href=\"https:\/\/www.faithful-to-nature.co.za\/ehk-cheesecloth\" target=\"_blank\" rel=\"noopener\">Cheesecloth<\/a> or clean dish cloth<\/li>\n<li>Elastic band or twine<br \/>\nOr<\/li>\n<li>Wooden spoon<\/li>\n<li><a href=\"https:\/\/www.faithful-to-nature.co.za\/severin-yoghurt-maker\" target=\"_blank\" rel=\"noopener\">Severin Yoghurt Maker<\/a><\/li>\n<\/ul>\n<h1>INGREDIENTS:<\/h1>\n<ul>\n<li>2 cans full cream <a href=\"https:\/\/www.faithful-to-nature.co.za\/cocomi-coconut-milk-cuisine-17-fat\" target=\"_blank\" rel=\"noopener\">coconut milk<\/a>*<\/li>\n<li>4 capsules probiotic (&gt; 10 billion culture)**<\/li>\n<li>2 tsp agar agar powder or tapioca starch<\/li>\n<li>1 tsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/vanilla-man-vanilla-powder\" target=\"_blank\" rel=\"noopener\">vanilla powder<\/a> (or <a href=\"https:\/\/www.faithful-to-nature.co.za\/vanilla-man-vanilla-extract-50ml\" target=\"_blank\" rel=\"noopener\">extract<\/a>)<\/li>\n<\/ul>\n<h1>OPTIONAL<\/h1>\n<ul>\n<li>2 Tbsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/pantry\/sugars-sweeteners\" target=\"_blank\" rel=\"noopener\">sweetener<\/a> of choice (<a href=\"https:\/\/www.faithful-to-nature.co.za\/coconut-connection-organic-coconut-sugar\" target=\"_blank\" rel=\"noopener\">coconut sugar<\/a>\/<a href=\"https:\/\/www.faithful-to-nature.co.za\/chaloner-maple-syrup-grade-a-organic-dark-delicious\" target=\"_blank\" rel=\"noopener\">maple syrup<\/a>\/<a href=\"https:\/\/www.faithful-to-nature.co.za\/simply-bee-raw-honey\" target=\"_blank\" rel=\"noopener\">honey<\/a>\/<a href=\"https:\/\/www.faithful-to-nature.co.za\/silan-date-syrup-400g\" target=\"_blank\" rel=\"noopener\">date syrup<\/a>)<\/li>\n<li>Chopped or stewed fruit<\/li>\n<\/ul>\n<p>*Coconut milk with minimal ingredients is the best (coconut, water, guar gum) and if organic it\u2019s a\u00a0bonus, but regular coconut milk also works if you don\u2019t mind the additional ingredients (stabilisers,\u00a0emulsifiers).<\/p>\n<p>**Be sure to buy the capsules that you can open up to use the probiotic powder inside and discard or\u00a0reuse the empty capsule shell. Use a probiotic that doesn\u2019t contain prebiotics and does contain\u00a0anything between 10-15billion cultures or more.<\/p>\n<h1>METHOD:<\/h1>\n<ol>\n<li>Sterilise the glass jar by filling it with boiling water in the sink and let it stand for 5-10 minutes.<img decoding=\"async\" class=\"size-medium wp-image-31530 alignright\" src=\"https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/Coconute-yogurt-2-300x214.jpg\" alt=\"\" width=\"300\" height=\"214\" srcset=\"https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/Coconute-yogurt-2-300x214.jpg 300w, https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/Coconute-yogurt-2-768x548.jpg 768w, https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/Coconute-yogurt-2-400x284.jpg 400w, https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/Coconute-yogurt-2-610x435.jpg 610w, https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/Coconute-yogurt-2.jpg 1000w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/li>\n<li>In the meantime, pour the coconut milk into a clean saucepan and bring to a simmer. Scoop \u00bc cup\u00a0aside in a small bowl and mix with the agar powder or tapioca starch, then pour the \u00bc cup milk that is\u00a0mixed with the thickener back into the saucepan and mix with the rest of the milk (this is too avoid\u00a0lumps). Let the milk mixture simmer for 5-10 minutes until it thickens slightly, stir frequently with a\u00a0wooden spoon.<\/li>\n<li>Pour the boiling water out of the jar and let it dry on the drying rack or dry with a clean dishcloth.<\/li>\n<li>Take the saucepan off the stove top and let it cool down slightly before adding in the contents of the probiotic capsules and mixing it in with a wooden spoon. You might experience a few lumps here use the back of the spoon to press them against the sides of the pan to dissolve.<\/li>\n<li>Mix in vanilla and sweetener, if desired, at this point.<\/li>\n<li><img decoding=\"async\" class=\"size-medium wp-image-31534 alignright\" src=\"https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/Coconute-yogurt-3-300x248.jpg\" alt=\"\" width=\"300\" height=\"248\" srcset=\"https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/Coconute-yogurt-3-300x248.jpg 300w, https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/Coconute-yogurt-3-768x634.jpg 768w, https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/Coconute-yogurt-3-610x504.jpg 610w, https:\/\/www.faithful-to-nature.co.za\/blog\/wp-content\/uploads\/Coconute-yogurt-3.jpg 1000w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/>Pour the yoghurt mixture into the dry, sterilised glass jar and cover with cloth and elastic band. You now need to place the jar in a temperature regulated area; the best place for this is your oven: turn the oven on for 5 minutes on 50 , then turn it off but leave the light on for a little heat and place the jar in the oven for 8-12 hours.If you are using the yoghurt maker, pour into the separate sterilised jars and cover with the lid provided. Switch the yoghurt maker on and place jars inside, leave for 6-8 hours.<\/li>\n<li>After specified time take out of the oven or yogurt maker, place a lid on the jar and refrigerate for 4-6 hours to thicken further. Scoop everything\u00a0into your blender and blend until smooth. Scoop back into jar and store in fridge, it won\u2019t set\u00a0that much again.<\/p>\n<p><em><strong>No thickener yoghurt:<\/strong><\/em> You can also make a fairly thick yoghurt without using any thickener\u00a0at all. Instead of using the whole can of coconut milk, just use the extra-thick creamy layer\u00a0that rises to the top. To do this, refrigerate the can of coconut milk overnight, open the can,\u00a0and scoop the layer of thick white cream off the top. It&#8217;s naturally thick, so there&#8217;s no need to\u00a0add thickening agents to it, and you can also skip the heating step (which makes the process<br \/>\nquicker). Note this yoghurt is incredibly rich, so it&#8217;s better as a topping for pancakes or\u00a0desserts.<\/p>\n<p><em><strong>For a thicker yoghurt:\u00a0<\/strong><\/em><\/p>\n<ul>\n<li>One option for making Greek-style yoghurt is to make tapioca- or agar agar-thickened\u00a0yoghurt and then strain it through cheesecloth overnight to remove excess water.\u00a0This also produces a sweet and rich yoghurt and it thicker than the recipe above.<\/li>\n<li><em>OR<\/em> scoop about 1 tablespoon of your fermented yogurt into a small bowl and stir\u00a0together with 1 teaspoon ground psyllium husk. Pour back into the jar and stir<br \/>\ntogether well.<\/li>\n<li><em>OR<\/em> stir 3 tablespoons of chia seeds into the jar of fermented yogurt. Chill for 4 hours\u00a0until thickened.<\/li>\n<\/ul>\n<p><em><strong>Smells funny:<\/strong> <\/em>The yoghurt is most likely contaminated by bad bacteria during the process,\u00a0don\u2019t eat it, discard it.<\/p>\n<p><em><strong>Not fermented:<\/strong><\/em> Leave it for a few more hours and then check if it tastes like yoghurt.
