{"id":30328,"date":"2018-07-26T13:13:22","date_gmt":"2018-07-26T11:13:22","guid":{"rendered":"https:\/\/www.faithful-to-nature.co.za\/blog\/?p=30328"},"modified":"2021-11-12T13:36:04","modified_gmt":"2021-11-12T11:36:04","slug":"vegan-red-kidney-bean-curry","status":"publish","type":"post","link":"https:\/\/www.faithful-to-nature.co.za\/blog\/vegan-red-kidney-bean-curry\/","title":{"rendered":"Vegan Red Kidney Bean Curry"},"content":{"rendered":"\n<p>This recipe was made by&nbsp;Lien Vanneste- the foodie founder of the Instagram page&nbsp;<a href=\"https:\/\/www.instagram.com\/vegan_meal_prep_sunday\/\" target=\"_blank\" rel=\"noreferrer noopener\">@Vegan_Meal_prep_Sundays<\/a>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>INGREDIENTS<\/strong><\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<ul><li>2 tbsp\u00a0<a href=\"https:\/\/www.faithful-to-nature.co.za\/crede-organic-extra-virgin-olive-oil\" target=\"_blank\" rel=\"noreferrer noopener\">olive<\/a><a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/oil-vinegar\/olive-oil?manufacturer%5B0%5D=Faithful+to+Nature\" target=\"_blank\" rel=\"noreferrer noopener\"> <\/a><a href=\"https:\/\/www.faithful-to-nature.co.za\/crede-organic-extra-virgin-olive-oil\" target=\"_blank\" rel=\"noreferrer noopener\">oil<\/a><\/li><li>2 onions, finely chopped<\/li><li>4 garlic cloves, minced<\/li><li>Piece of fresh ginger, minced<\/li><li>Big handful of coriander or flat leaf parsley, leaves roughly shredded and stalks finely chopped<\/li><li>2 tsp ground <a href=\"https:\/\/www.faithful-to-nature.co.za\/kalyan-organic-ground-cumin\" target=\"_blank\" rel=\"noreferrer noopener\">cumin<\/a><\/li><li>2 tsp smoked <a href=\"https:\/\/www.faithful-to-nature.co.za\/food\/baking-and-cooking\/herbs-spices-seasoning\/faithful-to-nature-smoked-paprika-powder\" target=\"_blank\" rel=\"noreferrer noopener\">paprika<\/a><\/li><li>4 tsp\u00a0garam masala<\/li><li>2 x 400 g can chopped tomatoes<\/li><li>1 cup<a href=\"https:\/\/www.faithful-to-nature.co.za\/truefoods-red-kidney-beans\" target=\"_blank\" rel=\"noreferrer noopener\"> red kidney beans<\/a>, soaked overnight and rinsed<\/li><li>1 cup of water<\/li><li>2 cup of shredded kale<\/li><li>Cooked (in the slow cooker) short grain<a href=\"https:\/\/www.faithful-to-nature.co.za\/faithful-to-nature-rice-long-grain-brown-650g\" target=\"_blank\" rel=\"noreferrer noopener\"> brown rice<\/a>, to serve<\/li><\/ul>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>METHOD<\/strong><\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<ol><li>Cook the the red kidney beans for 12 mins on high pressure in the pressure cooker. Drain the excess water.<\/li><li>Heat the oil in a frying pan on the stove on medium heat. Saut\u00e9 the onion until translucent. Add the garlic, ginger and coriander or parsley stalks and cook for a few more minutes, until fragrant.<\/li><li>Add the spices and cook for 1 more minute! Add the canned tomatoes, beans and water and then bring to the boil.<\/li><li>Turn down the heat and simmer for 15-20 mins.
