Chickpea flour can be used in a variety of baked goods, has a fine texture, is low GI and super high in protein and can be found at Dischem or at most health shops, Indian or Asian supermarkets. I adapted this recipe from a recipe I found on onegreenplanet.org and it has become a staple in our home as a healthy high protein snack, a quick on-the-go breakfast or an accompaniment to salad and vegetables to make up a convenient meal. This is also an amazing recipe for people who are plant-based but who struggle to digest whole legumes or who don&#8217;t love eating beans but still want to get enough protein into their diets. Chickpea flour is very easy on the digestion and doesn&#8217;t really taste like beans or chickpeas, especially when baked into something like this. I also love that chickpea flour is so budget friendly!<\/p>\n<p>Lastly, there are so many variations on this basic recipe. You could add vegan cheese to make these into cheesy muffins or you could try different combinations of vegetables for example, butternut and spinach or jalapeno and corn! The possibilities are endless.<\/p>\n<p><em>For my patients on calorie-controlled meal plans:<\/em><\/p>\n<p><em><span style=\"font-weight: 400;\">2 muffins =<\/span><\/em><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><em><span style=\"font-weight: 400;\">One legume\/ protein serving<\/span><\/em><\/li>\n<li style=\"font-weight: 400;\"><em><span style=\"font-weight: 400;\">A fat serving<\/span><\/em><\/li>\n<li style=\"font-weight: 400;\"><em><span style=\"font-weight: 400;\">One veg serving<\/span><\/em><\/li>\n<\/ul>\n<p><em>SERVES 30 MUFFINS<\/em><\/p>\n<p>&nbsp;<\/p>\n<h2><strong>INGREDIENTS<\/strong><\/h2>\n<p><strong><em>For the vegetable filling:<\/em><\/strong><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 teaspoons of <a href=\"https:\/\/www.faithful-to-nature.co.za\/catalogsearch\/result\/?q=olive+oil\" target=\"_blank\" rel=\"noopener\">olive oil<\/a><\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 cloves garlic, crushed<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 small to medium onion, chopped<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 large red pepper, chopped<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">200g mushrooms of choice, chopped<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">100g sundried tomatoes in vinegar, drained and chopped\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 spring onions, thinly sliced<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bc cup pitted green olives, roughly chopped<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 teaspoons <a href=\"https:\/\/www.faithful-to-nature.co.za\/catalogsearch\/result\/?q=Italian+herbs\" target=\"_blank\" rel=\"noopener\">Italian herbs<\/a><\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\"><a href=\"https:\/\/www.faithful-to-nature.co.za\/catalogsearch\/result\/?q=Salt\" target=\"_blank\" rel=\"noopener\">Salt<\/a> and <a href=\"https:\/\/www.faithful-to-nature.co.za\/catalogsearch\/result\/?q=pepper\" target=\"_blank\" rel=\"noopener\">pepper<\/a> to taste<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong><em>For the batter:<\/em><\/strong><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">4 cups <a href=\"https:\/\/www.faithful-to-nature.co.za\/catalogsearch\/result\/?q=chickpea+flour\" target=\"_blank\" rel=\"noopener\">chickpea flour<\/a><\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd cup nutritional<a href=\"https:\/\/www.faithful-to-nature.co.za\/catalogsearch\/result\/?q=+yeast\" target=\"_blank\" rel=\"noopener\"> yeast<\/a><\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 teaspoons of smoked paprika<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 teaspoons of ground <a href=\"https:\/\/www.faithful-to-nature.co.za\/catalogsearch\/result\/?q=turmeric+powder\" target=\"_blank\" rel=\"noopener\">turmeric powder<\/a><\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd teaspoon of ground <a href=\"https:\/\/www.faithful-to-nature.co.za\/catalogsearch\/result\/?q=+cumin\" target=\"_blank\" (optional)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 teaspoons <a href=\"https:\/\/www.faithful-to-nature.co.za\/catalogsearch\/result\/?q=baking+powder\" target=\"_blank\" rel=\"noopener\">baking powder<\/a><\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">4 cups of water<\/span><\/li>\n<\/ul>\n<h2><strong><br \/>\nMETHOD<\/strong><\/h2>\n<ol>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Preheat your oven to 190\u00b0C.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Spray your muffin tins generously and set aside. You will need approximately 3 x 12 well muffin tins<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Begin by heating up your cast iron or saut\u00e9 pan over medium heat with olive oil.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Once hot, add your onion and garlic and saute until translucent.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Next, add your chopped veggies and herbs and saut\u00e9 until softened and cooked through (about 4-6 minutes).<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">While the veggies are cooking, place your chickpea flour, nutritional yeast, seasonings, and baking powder into your stand mixer or large mixing bowl. Whisk to combine.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Then add your water and blend to combine. If you are mixing by hand, add your water bit by bit, mixing continuously to prevent lumps from forming.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Into your prepared muffin tins, add a heaped desert spoon of your vegetable mixture to the bottom of each muffin well. Repeat until all the veggies are used.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Next, pour about \u00bc cup of the batter into each muffin well, covering the vegetables in batter. The muffin well should be almost full.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Bake for 22 minutes or until golden on the top and firm to the touch.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Remove and let cool completely.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Store in an airtight container in the fridge for up to 5 days or in the freezer for up to 1 month.<\/span><\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<hr \/>\n<p><em><strong>Notes:<\/strong><\/em><\/p>\n<p><span style=\"font-weight: 400;\">* Kala Namak is also known as black salt and is a sulphuric salt which adds an egg-like flavour to the batter.
