Why not?! It\u2019s delicious and nutritious \u2013 and with all the spices it\u2019s a warming, immune boosting answer to the eternal question \u201cWhat\u2019s for breakfast?\u201d Traditionally served with a thick layer of butter spread over it, I sometimes use <a href=\"https:\/\/www.faithful-to-nature.co.za\/oh-mega-almond-nut-butter\" target=\"_blank\" rel=\"noopener\">almond butter<\/a> instead for a protein boost. Served with a mug of <a href=\"https:\/\/www.faithful-to-nature.co.za\/khoisan-tea-organic-rooibos-chai-envelope\" target=\"_blank\" rel=\"noopener\">rooibos chai tea<\/a><\/em><em>, this breakfast will chase the cold away!<\/em><\/p>\n<p><em>The original ontbijtkoek is made with wheat or rye flour, sugar and milk \u2013 this recipe is my gluten, dairy and sugar-free adaptation!<\/em><\/p>\n<p><em>\u00a0<strong>MAKES:\u00a0 2 Mini Loaves\u00a0 (pans measure 14cm x 8cm)<\/strong><\/em><\/p>\n<h3>INGREDIENTS:<\/h3>\n<ul>\n<li>1\u00bc cups <a href=\"https:\/\/www.faithful-to-nature.co.za\/natures-choice-gluten-free-almond-flour\" target=\"_blank\" rel=\"noopener\">almond flour<\/a>*<\/li>\n<li>3 organic eggs<\/li>\n<li>\u00bc teaspoon <a href=\"https:\/\/www.faithful-to-nature.co.za\/himalayan-fine-salt-shaker\" target=\"_blank\" rel=\"noopener\">Himalayan<\/a> or sea salt<\/li>\n<li>1 tablespoon <a href=\"https:\/\/www.faithful-to-nature.co.za\/kalyan-organic-ground-cinnamon\" target=\"_blank\" rel=\"noopener\">cinnamon<\/a><\/li>\n<li>1 teaspoon ground <a href=\"https:\/\/www.faithful-to-nature.co.za\/kalyan-organic-ground-nutmeg\" target=\"_blank\" rel=\"noopener\">nutmeg<\/a><\/li>\n<li>1 teaspoon ground <a href=\"https:\/\/www.faithful-to-nature.co.za\/good-life-organic-ginger-powder\" target=\"_blank\" rel=\"noopener\">ginger<\/a><\/li>\n<li>\u00bd teaspoon ground cloves<\/li>\n<li>\u00bd cup butternut, roasted, cooled and mashed (it is important to not steam the butternut as it will have too much moisture for the bread)<\/li>\n<li>3 tablespoon <a href=\"https:\/\/www.faithful-to-nature.co.za\/simply-bee-raw-honey\" target=\"_blank\" rel=\"noopener\">raw honey<\/a><\/li>\n<li>2 tablespoon unsulphured <a href=\"https:\/\/www.faithful-to-nature.co.za\/naturmade-blackstrap-molasses\" target=\"_blank\" rel=\"noopener\">blackstrap molasses<\/a><\/li>\n<li>1 tablespoon <a href=\"https:\/\/www.faithful-to-nature.co.za\/kapruka-organic-virgin-coconut-oil\" target=\"_blank\" rel=\"noopener\">coconut oil<\/a>, melted<\/li>\n<li>\u00bd teaspoon <a href=\"https:\/\/www.faithful-to-nature.co.za\/pakmed-sodium-bicarbonate\" target=\"_blank\" rel=\"noopener\">baking soda<\/a><\/li>\n<li>\u00bd teaspoon aluminium-free baking powder<\/li>\n<\/ul>\n<h3><\/h3>\n<h3>METHOD:<\/h3>\n<ol>\n<li>Preheat the oven to 180\u00baC.<\/li>\n<li>Grease two 14cm x 8cm loaf pans. Line the bottom of the pans with parchment paper to ensure the loaves fall out easily once cooked.<\/li>\n<li>Place the almond flour and eggs in a large mixing bowl and beat with an electric beater for 2 minutes. This allows the rather dry almond flour to absorb some moisture before being cooked.<\/li>\n<li>Add the salt, cinnamon, nutmeg, ginger, and cloves and beat to mix.<\/li>\n<li>In another mixing bowl beat together the butternut, honey, molasses and coconut oil. Add this mixture to the almond flour mixture.<\/li>\n<li>Add the baking soda and baking powder and beat until combined.<\/li>\n<li>Scoop the batter into your prepared loaf pans and bake for 40 minutes, until a knife inserted into the middle comes out clean.<\/li>\n<li>Place the cake on a wire rack to cool, then wrap in tin foil for 24 hours before eating \u2013 this creates the delicious sticky crust!<\/li>\n<li>Cut and serve as is, or pop in the toaster and spread with butter.<\/li>\n<li>The remaining cake can be stored in a sealed container for up to 3 days. For longer storage, freeze slices for up to 1 month.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><em>Wondering how this can boost your little one\u2019s immune system? The secret power is in the spices! They are really a perfect example of how food can be your medicine.<\/em><\/p>\n<p><strong>CINNAMON<\/strong><\/p>\n<p>Cinnamon is known to have antioxidant, antidiabetic, antiseptic, local aesthetic, anti-inflammatory, warming, and anti-flatulent properties.<br \/>\nIt supports digestive function; relieves congestion; relieves pain and stiffness of muscles and joints; stimulates circulation; helps prevent urinary tract infections, tooth decay and gum disease and it is a powerful anti-microbial agent that can kill E. coli, Candida and other bacteria.<\/p>\n<p><strong>NUTMEG<\/strong><\/p>\n<p>Nutmeg has a variety of healing properties and is a useful remedy for: insomnia, anxiety, calming muscle spasms, nausea and vomiting, indigestion (gas) and diarrhoea. It has the ability to detoxify the liver and kidneys and acts as an anti-inflammatory and antibacterial.<\/p>\n<p><strong>GINGER<\/strong><\/p>\n<p>Ginger is well known as a remedy for headaches, menstrual cramps, motion sickness, nausea, indigestion, wind, colic, irritable bowel, loss of appetite, chills, cold, flu, bronchitis, poor circulation, and heartburn. Ginger tea is a useful remedy for morning sickness.
