They are succulent, full of flavour and look like a dream.<\/p>\n<p>In celebration of Easter, I decided to slice the cauliflower into thick steaks and serve it with complimenting flavours like lemon, goat&#8217;s cheese and toasty pine nuts.<\/p>\n<p>This makes\u00a0an amazing main dish, or pairs well as a side with pan-fried chicken or baked fish.<\/p>\n<h1>C A U L I F L O W E R\u00a0 \u00a0S T E A K S\u00a0 \u00a0W I T H\u00a0 G O A T S\u00a0 C H E E S E\u00a0 &amp;\u00a0 P I N E\u00a0 N U T S<\/h1>\n<p><em><strong>Serves 4<\/strong><\/em><\/p>\n<h2>INGREDIENTS<\/h2>\n<p><strong>CAULIFLOWER<\/strong><\/p>\n<p>1 head cauliflower<\/p>\n<p>3 Tbsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/crede-organic-coconut-oil-odourless\" target=\"_blank\" rel=\"noopener noreferrer\">coconut oil<\/a>, melted<\/p>\n<p>1 Tsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/oryx-desert-salt-braai-shaker\" target=\"_blank\" rel=\"noopener noreferrer\">Braai Seasoning<\/a><\/p>\n<p>1\/4 tsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/universal-vision-himalayan-coarse-crystal-salt-grinder\" target=\"_blank\" rel=\"noopener noreferrer\">Himalayan Crystal Salt<\/a><\/p>\n<p>Ground <a href=\"https:\/\/www.faithful-to-nature.co.za\/oryx-black-pepper\" target=\"_blank\" rel=\"noopener noreferrer\">black pepper<\/a>, to taste<\/p>\n<p><strong>GOAT\u2019S CHEESE DRESSING<\/strong><\/p>\n<p>80g goat\u2019s cheese ( I either use the chevin or Chavroux goat\u2019s cheese from Giovanni\u2019s \/ Woolworths)<\/p>\n<p>1 Tbsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/prince-albert-extra-virgin-olive-oil-1l\" target=\"_blank\" rel=\"noopener noreferrer\">extra virgin olive oil<\/a><\/p>\n<p>1 tsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/chaloner-maple-syrup-grade-a-organic-dark-delicious\" target=\"_blank\" rel=\"noopener noreferrer\">organic maple syrup<\/a> or <a href=\"https:\/\/www.faithful-to-nature.co.za\/raw-golden-honey-300g\" target=\"_blank\" rel=\"noopener noreferrer\">honey<\/a><\/p>\n<p>Juice of half a lemon<\/p>\n<p><strong>SERVING<\/strong><\/p>\n<p>50g kale, steamed and seasoned<\/p>\n<p>40g <a href=\"https:\/\/www.faithful-to-nature.co.za\/faithful-to-nature-pine-kernels-300g\" target=\"_blank\" rel=\"noopener noreferrer\">pine nuts<\/a>, lightly toasted<\/p>\n<p>Lemon wedges, optional<\/p>\n<p>Fresh chopped parsley, optional<\/p>\n<h2>METHOD<\/h2>\n<ol>\n<li>Preheat oven to 180 degrees C and line a roasting tray with baking paper or foil.<\/li>\n<li>Place the cauliflower onto the lined roasting tray and cover with 2 Tbsp coconut oil. Massage into the cauliflower using your hands.<\/li>\n<li>Sprinkle over the Persian Seasoning, salt and black pepper, and repeat the massaging process. Allow cauliflower to marinate for 10 minutes.<\/li>\n<li>Slice the cauliflower into 1cm thick vertical slices and spread slices evenly over tray. Don\u2019t worry if there are any small bits that break off while slicing.<\/li>\n<li>Add chopped leeks to baking tray.<\/li>\n<li>Drizzle the cauliflower slices and leeks with the remaining coconut oil (and an extra sprinkle of salt and pepper if desired) and pop into the oven for 40 minutes or until cooked through.<\/li>\n<li>Meanwhile prepare goat\u2019s cheese dressing: place all ingredients into a bowl and whisk to combine. Keep in the fridge until 5 minutes before serving.<\/li>\n<li>Remove cauliflower from the oven.<\/li>\n<li>Immediately add cauliflower steaks and crispy leeks to a platter of steamed kale. Drizzle with goat\u2019s cheese dressing and top with toasted pine nuts.
