\u00a0I remember digging in with a long soda spoon; a thick-rimmed wine glass filled to the brim with layers of caramel treat, tennis biscuits, peppermint crisp, and cream. \u00a0You could never finish it alone, despite trying, and always felt a bit green around the gills after.<\/p>\n<p>My husband and I relived those fond memories while I was working on this vegan version of it, and dug in with a long soda spoon, marvelling at the fact that this was so good yet lacked a mountain of refined sugar. \u00a0Delicious, and not sickly sweet.<\/p>\n<p>And you can unashamedly share it with your family and tiny tots. \u00a0In fact, add any leftover cashew nut cream or caramel to their breakfast oats. \u00a0And then be prepared for the demands to make more!<\/p>\n<p>Merry, healthy and happy Christmas, everyone.<\/p>\n<h2>INGREDIENTS<\/h2>\n<p>Prep time: roughly 1 hour excluding the soak time | Makes: 2-4, depending on size of glass and thickness of layers<\/p>\n<p><em>For the caramel layer<\/em><\/p>\n<ul>\n<li>\u2154 cups coconut oil<\/li>\n<li>1 cup <a href=\"https:\/\/www.faithful-to-nature.co.za\/by-nature-organic-pitted-dried-dates\">dates<\/a> (175g) &#8211; soaked overnight<\/li>\n<li>1 tsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/catalogsearch\/result\/index\/?cat=664&amp;q=baobab+powder\">baobab powder<\/a><\/li>\n<li>Pinch of salt<\/li>\n<li>\u00bc cup water<\/li>\n<\/ul>\n<p>OPTIONAL:<\/p>\n<ul>\n<li>2 Tbsp cashew nut cream<\/li>\n<\/ul>\n<p><em>For cashew nut cream<\/em><br \/>\n1 cup <a href=\"https:\/\/www.faithful-to-nature.co.za\/by-nature-raw-cashews\">cashew nuts<\/a> (125g) &#8211; soaked overnight<br \/>\n\u00bd cup water<br \/>\n\u00bd <a href=\"https:\/\/www.faithful-to-nature.co.za\/vanilla-man-vanilla-pods\">vanilla pod<\/a> &#8211; optional but yum<br \/>\n2 Tbsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/chaloner-maple-syrup-grade-a-dark-amber\">maple syrup<\/a><br \/>\nPinch of salt<\/p>\n<p><em>For the mint chocolate crunch<br \/>\n<\/em>\u00bd bar <a href=\"https:\/\/www.faithful-to-nature.co.za\/cocoafair-65-dark-chocolate-with-mint\">Coco\u00e1Fair, mint &#8211; chilled<\/a><br \/>\n\u00bd pack <a href=\"https:\/\/www.faithful-to-nature.co.za\/caring-candies-sugar-free-toffee-mint-bonbons\">Caring Candies, toffee mint bonbons<\/a><br \/>\n2 drops <a href=\"https:\/\/www.faithful-to-nature.co.za\/soil-peppermint-essential-oil\">peppermint essential oil<\/a> or <a href=\"https:\/\/www.faithful-to-nature.co.za\/nielsen-massey-pure-peppermint-extract\">peppermint extract<\/a> or a sprig of fresh mint<\/p>\n<p><em>For the biscuit<\/em><\/p>\n<p>\u00bd x box <a href=\"https:\/\/www.faithful-to-nature.co.za\/orgran-amaretti-biscotti\">Orgran Amaretti Biscotti<\/a><br \/>\n\u00bc cup <a href=\"https:\/\/www.faithful-to-nature.co.za\/earth-products-coconut-desiccated\">desiccated coconut<\/a>, lightly toasted<\/p>\n<h2>METHOD:<\/h2>\n<p><strong>PREP THE NIGHT BEFORE:<\/strong><\/p>\n<p>In separate bowls, measure out one cup of cashews, and one cup of dates. \u00a0Cover with water and allow to soak overnight.<\/p>\n<p><strong>TO MAKE THE CARAMEL\u00a0<\/strong><\/p>\n<ol>\n<li>Add caramel ingredients to a blender and blend for about 20 seconds. \u00a0Scrape down the sides and blend again until smooth. \u00a0If it\u2019s too thick at first, add more water a little at a time. \u00a0The baobab powder will thicken it up slightly in the fridge, so no need to burn out your blender motor.<\/li>\n<li>If you\u2019re not using it right away, refrigerate it. \u00a0The coconut oil solidifies when cool, so remember to take your caramel out about 30 minutes to an hour before you layer your dessert, to soften it. \u00a0If you forget to take it out, pop it in the blender for a bit; about 30 seconds should do it.<\/li>\n<\/ol>\n<p><strong>TO MAKE THE CASHEW CREAM<\/strong><\/p>\n<ol>\n<li>Scrape the seeds from the vanilla pod* and put them in a blender.<\/li>\n<li>Add the rest of the cashew nut cream ingredients and blend for about 30 seconds, scraping down the sides and blending again if necessary.<\/li>\n<li>Refrigerate until ready to use.<\/li>\n<\/ol>\n<p>*I keep the scraped out vanilla pods to add to oats; either when cooking them or preparing overnight oats.<\/p>\n<p><strong>TO MAKE THE MINT CHOCOLATE CRUNCH<\/strong><\/p>\n<ol>\n<li>Smash the Caring Candies with a rolling pin or something heavy to break them up into shards.\u00a0<strong>Tip:<\/strong> carefully open the packet, remove about half of them, and store in an airtight container to enjoy later. Close the packet with the remaining sweets by folding it over, and wrap them in a tea towel before smashing them to prevent your kitchen counter being covered in sweet shards.<\/li>\n<li>Smash the chocolate up into small chunks with a rolling pin.<\/li>\n<li>In a glass jar or bowl mix the Caring Candies with the chocolate pieces. \u00a0Add 2 drops of peppermint essential oil (make sure you&#8217;re using a brand that is safe for ingesting otherwise you can use peppermint extract if you&#8217;re not sure). Otherwise \u2013 when you are layering your dessert \u2013 add a few leaves of freshly chopped mint.<\/li>\n<\/ol>\n<p><strong>TO MAKE THE BISCUIT LAYER\u00a0<\/strong><\/p>\n<ol>\n<li>In a pan on a medium-low heat, toast the desiccated coconut, stirring often, until lightly browned.<\/li>\n<li>Put the biscuits into a blender and blend on high for a few seconds to make crumbs.<\/li>\n<li>Combine crumbs and toasted coconut in a glass jar or bowl.<\/li>\n<\/ol>\n<p><strong>LAYERING THE DESSERT\u00a0<\/strong><\/p>\n<ol>\n<li>In your chosen glass, build a layer of each using a spoon or piping bag, filling your glass with caramel, cashew nut cream, mint chocolate crunch, and biscuit. Caramel, cashew nut cream, mint chocolate\u2026 until you reach the top.<\/li>\n<li>Top with a sprinkle of chocolate and a fresh mint leaf.<\/li>\n<li>Serve chilled.<\/li>\n<\/ol>\n<p>Let us know what you think of this dessert, and how your guests received it.
