But that&#8217;s exactly what makes them so perfect for adding to things like cupcakes \u2013\u00a0they don\u2019t have a particularly strong\u00a0flavour, they add a ton of moisture to baked goods, and best of all, they&#8217;re chock full of\u00a0nutrients.<\/p>\n<p><span style=\"font-family: inherit; line-height: 1.5; text-align: inherit;\">Loaded with vitamins A, B and C, beetroots\u00a0are also\u00a0high in fibre, manganese, folate and are a rare source of phytonutrients called\u00a0<\/span><a style=\"font-family: inherit; line-height: 1.5; text-align: inherit;\" href=\"http:\/\/en.wikipedia.org\/wiki\/Betalain\">betalains<\/a><span style=\"font-family: inherit; line-height: 1.5; text-align: inherit;\">, which have been shown to have antioxidant, anti-inflammatory, and detoxification qualities.<\/span><\/p>\n<p>All of that goodness inside these cupcakes? Who would\u2019ve thought?<\/p>\n<p><strong>Fudgy vegan cupcakes with pureed roasted beetroots and a dusting of cocoa powder.<\/strong><\/p>\n<p>Makes\u00a010 cupcakes<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>2 medium beets<\/li>\n<li>1 cup <a href=\"http:\/\/www.faithful-to-nature.co.za\/La-Mandorle-Almond-Milk-Natural-Flavour-p-4448.html\" target=\"_blank\">almond milk<\/a><\/li>\n<li>1 tsp <a href=\"http:\/\/www.faithful-to-nature.co.za\/Good-Life-Apple-Cider-Vinegar-Cloudy-p-4365.html\" target=\"_blank\">apple cider vinegar<\/a><\/li>\n<li>\u00be cup <a href=\"http:\/\/www.faithful-to-nature.co.za\/Komati-Organic-Brown-Sugar-p-3107.html\" target=\"_blank\">organic brown sugar<\/a> or\u00a0<a href=\"http:\/\/www.faithful-to-nature.co.za\/Sugars-Sweeteners-p-1-c-186.html\" target=\"_blank\">sugar alternative<\/a><\/li>\n<li>\u00bc cup melted <a href=\"http:\/\/www.faithful-to-nature.co.za\/Crede-Organic-Virgin-Coconut-Oil-p-540.html\" target=\"_blank\">coconut oil<\/a><\/li>\n<li>2 tsp pure <a href=\"http:\/\/www.faithful-to-nature.co.za\/Vanilla-Man-Vanilla-Extract-50ml-p-5608.html\" target=\"_blank\">vanilla extract<\/a><\/li>\n<li>1 cup + 1 heaping Tbsp <a href=\"http:\/\/www.faithful-to-nature.co.za\/Eureka-Unbleached-Stone-Ground-Cake-Flour-p-5123.html\" target=\"_blank\">unbleached flour<\/a> or <a href=\"http:\/\/www.faithful-to-nature.co.za\/Health-Connection-Gluten-Free-Flour-Mix-p-957.html\" target=\"_blank\">gluten-free\u00a0alternative<\/a><\/li>\n<li>\u00bd cup <a href=\"http:\/\/www.faithful-to-nature.co.za\/Superfoods-Raw-Organic-Cacao-Powder-p-1062.html\" target=\"_blank\">cacao powder<\/a> + more for dusting<\/li>\n<li>1 tsp baking soda<\/li>\n<li>\u00bd tsp <a href=\"http:\/\/www.faithful-to-nature.co.za\/Creeds-Gluten-Free-Aluminium-Free-Baking-Powder-p-2901.html\" target=\"_blank\">baking powder<\/a><\/li>\n<li>pinch <a href=\"http:\/\/www.faithful-to-nature.co.za\/Himalayan-Fine-Salt-p-600.html\" target=\"_blank\">salt<\/a><\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ul>\n<li>Preheat oven to 190\u00b0C.<\/li>\n<li>Remove stem and root from beets, scrub and wash clean.<\/li>\n<li>Drizzle on a bit of coconut oil and roast for at least one hour until tender. Let cool to room temperature.<\/li>\n<li>Once cooled, finely grate or pur\u00e9e beets. Measure out \u00bd cup and set aside.<\/li>\n<li>Line a muffin pan with paper liners.<\/li>\n<li>Whisk almond milk and vinegar in a large bowl, then set aside for a few minutes to curdle. Add sugar, oil, vanilla and \u00bd cup beets and beat until foamy.<\/li>\n<li>Sift together flour, cocoa powder, baking soda, baking powder and salt and slowly add to the wet mixture, stirring as you go. Beat until no large lumps remain.<\/li>\n<li>Pour batter into liners, filling them \u00be of the way. Bake for 22-25 minutes, or until a toothpick comes out clean.
