{"id":20893,"date":"2016-02-08T07:00:58","date_gmt":"2016-02-08T07:00:58","guid":{"rendered":"http:\/\/www.faithful-to-nature.co.za\/natural-organic-blog\/?p=20893"},"modified":"2016-02-08T07:00:58","modified_gmt":"2016-02-08T07:00:58","slug":"incredible-avocado-cheesecake-recipe","status":"publish","type":"post","link":"https:\/\/www.faithful-to-nature.co.za\/blog\/incredible-avocado-cheesecake-recipe\/","title":{"rendered":"Irresistible Avocado Cheesecake Recipe"},"content":{"rendered":"<p>Free from refined sugar, flour, vegetable oils and dairy, this incredibly creamy\u00a0and indulgent cheesecake will leave you wondering how anything this tasty can be so nutritious.<\/p>\n<p>A blend\u00a0of toasted pecan nuts, cacao nibs and coconut forms\u00a0a\u00a0wonderfully nutty, chocolaty base that&#8217;s good enough to eat on its own, while the whipped lime-flavoured\u00a0filling is sweetened with dates, honey and stevia to\u00a0create\u00a0a zesty, decadent mousse.<\/p>\n<p>Try making these into little squares to serve as individual desserts, or spoon the avocado lime mixture into small glasses, crumble over the base mixture and drizzle with a little melted 85% dark chocolate for a \u2018deconstructed\u2019 take on the traditional cheesecake.<\/p>\n<p>INGREDIENTS<\/p>\n<p>Serves 12<\/p>\n<p>FOR THE BASE<\/p>\n<ul>\n<li>125g <a href=\"http:\/\/www.faithful-to-nature.co.za\/By-Nature-Raw-Organic-Pecan-Nuts-p-5743.html\" target=\"_blank\">pecan nuts<\/a><\/li>\n<li>45g <a href=\"http:\/\/www.faithful-to-nature.co.za\/Earth-Products-Coconut-Desiccated-p-2392.html\" target=\"_blank\">desiccated coconut\u00a0<\/a><\/li>\n<li>70g <a href=\"http:\/\/www.faithful-to-nature.co.za\/Superfoods-Organic-Cacao-Nibs-p-1187.html\" target=\"_blank\">cacao nibs<\/a><\/li>\n<li>185g <a href=\"http:\/\/www.faithful-to-nature.co.za\/By-Nature-Organic-Pitted-Dried-Dates-p-3089.html\" target=\"_blank\">pitted dates<\/a><\/li>\n<li>3 Tbsp <a href=\"http:\/\/www.faithful-to-nature.co.za\/Crede-Organic-Virgin-Coconut-Oil-p-540.html\" target=\"_blank\">coconut oil<\/a>, melted and at room temperature<\/li>\n<\/ul>\n<p>FOR THE FILLING<\/p>\n<ul>\n<li>560g avocado flesh (from about 5 avocados)<\/li>\n<li>200ml lime juice (8\u201310 limes)<\/li>\n<li>1 tsp lime zest<\/li>\n<li>190g <a href=\"http:\/\/www.faithful-to-nature.co.za\/search.php?mode=search&amp;scat=400\" target=\"_blank\">raw honey<\/a><\/li>\n<li>175ml <a href=\"http:\/\/www.faithful-to-nature.co.za\/Crede-Organic-Virgin-Coconut-Oil-p-540.html\" target=\"_blank\">coconut oil<\/a>, melted and at room temperature<\/li>\n<li>A few drops of <a href=\"http:\/\/www.faithful-to-nature.co.za\/Health-Connection-Stevia-Herbal-Liquid-Sweetener-p-832.html\" target=\"_blank\">stevia<\/a>\u00a0to sweeten (optional)<\/li>\n<\/ul>\n<p>DIRECTIONS<\/p>\n<ol>\n<li>Preheat oven to 150\u00b0C. Line the base and sides of a springform or loose-bottomed 18cm round cake tin with baking paper.<\/li>\n<li>Toast pecan nuts and desiccated coconut on a lined baking tray and place in oven for 7\u20138 minutes until golden. Watch carefully to make sure it doesn&#8217;t burn.<\/li>\n<li>Transfer to a food processor and add\u00a0dates, cacao nibs and coconut oil. Blend until mixture is crumbly and holds together when pinched &#8211; don\u2019t let it go completely smooth.<\/li>\n<li>Tip base mixture into prepared tin. Press down firmly with the back of a spoon, ensuring it is neat and flat where it meets the sides of tin. Transfer to fridge while you prepare the filling.<\/li>\n<li>Place all the filling ingredients in a food processor and blend until smooth and silky. Check for taste and add more lime juice, zest or stevia according to preference (it\u2019s best to keep it deliciously tangy).<\/li>\n<li>Remove cake tin from fridge and pour filling over the base. Cover the tin\u00a0with\u00a0a plate and return to the fridge for a couple of hours or overnight, if possible, to set.<\/li>\n<li>To serve, run a knife around the inner edge of the tin and carefully push the base up from the bottom.
