Oats can be contaminated by being processed in facilities that also process gluten-containing grains. As we are gluten, lactose and wheat intolerant, this bread is a real treat for us all. Cannot believe how easy it is to make and that it was a great success ! Use a 2:1 ratio of flour to starch.<\/p>\n<p>\u2022 Potato starch<br \/>\n\u2022 <a href=\"http:\/\/www.faithful-to-nature.co.za\/Natures-Choice-Corn-Starch-p-4275.html\" target=\"_blank\">Cornstarch<\/a><br \/>\n\u2022 <a href=\"http:\/\/www.faithful-to-nature.co.za\/Health-Connection-Organic-Arrowroot-Powder-p-3643.html\" target=\"_blank\">Arowroot starch<\/a><br \/>\n\u2022<a href=\"http:\/\/www.faithful-to-nature.co.za\/Natures-Choice-Tapioca-Flour-p-4276.html\" target=\"_blank\"> Tapioca starch<\/a><\/p>\n<h3>Combinations<\/h3>\n<p>Combine more than one type of flour \u2013 at least one flour with one starch.<\/p>\n<h3>Moisture<\/h3>\n<p>Moisture is important so that your baking isn\u2019t dry and helps your flour to bind and improves the flavour. Gluten is like an elastic glue that binds flours together and adds that elasticity dough has and you need to compensate for the lack of gluten. Binders you can use include:<br \/>\n\u2022 <a href=\"http:\/\/www.faithful-to-nature.co.za\/Health-Connection-Guar-Gum-p-4202.html\" target=\"_blank\">Guar gum<\/a><br \/>\n\u2022<a href=\"http:\/\/www.faithful-to-nature.co.za\/Health-Connection-Xanthan-Gum-p-4203.html\" target=\"_blank\"> Xantham gum<\/a><br \/>\n\u2022 Psyllium husks, <a href=\"http:\/\/www.faithful-to-nature.co.za\/Superfoods-Organic-Chia-Meal-p-3123.html\" target=\"_blank\">ground chia <\/a>or <a href=\"http:\/\/www.faithful-to-nature.co.za\/Truefood-Chia-Flax-Meal-p-8450.html\" target=\"_blank\">flax seeds<\/a> help bind and also add healthy fibre<\/p>\n<h3>Flavour<\/h3>\n<p>Flavouring your gluten-free baking can make all the difference and adds depth to what can be a cardboard-like flavor. Some flours have more flavour, texture and moistness, especially the nut flours and coconut flour.
