Save the beets for last, so they don\u2019t turn your whole salad pink!<\/li>\n<li>Toss together in a large bowl &amp; set aside.<\/li>\n<li>Whisk together the lemon juice &amp; vinegar.<\/li>\n<li>Whisk in the yoghurt &amp; mustard.<\/li>\n<li>Gradually drizzle in the olive oil, whisking constantly until you have an emulsified dressing.<\/li>\n<li>Season with salt &amp; pepper to taste.<\/li>\n<li>Drizzle the dressing over the salad &amp; add the fresh herbs; toss with a spatula. Serve chilled or at room temperature.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<hr \/>\n<h2><strong>CORN-STUFFED TOMATOES<br \/>\n<\/strong><em style=\"font-size: 16px;\">Serves 6<\/em><\/h2>\n<p>This recipe requires you to plan ahead a little bit &#8211; it always pays to have some cooked rice our couscous stashed in the fridge for when you need to put together a tasty and balanced no-cook meal.<\/p>\n<h3><strong>INGREDIENTS:<\/strong><\/h3>\n<ul>\n<li>2 cups fresh sweetcorn kernels<\/li>\n<li>1 cup basmati or <a href=\"https:\/\/www.faithful-to-nature.co.za\/Health-Connection-Organic-Short-Grain-Brown-Rice-p-2260.html\" target=\"_blank\" rel=\"noopener\">brown rice<\/a>, precooked<\/li>\n<li>\u00bd a fresh ripe avocado<\/li>\n<li>\u00bc cup yellow bell pepper, chopped<\/li>\n<li>\u00bc cup green bell pepper, chopped<\/li>\n<li>\u00bc cup red onion, chopped<\/li>\n<li>4Tbsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/Phileos-Organic-Extra-Virgin-Olive-Oil-p-2873.html\" target=\"_blank\" rel=\"noopener\">olive oil<\/a><\/li>\n<li>3Tbsp fresh cilantro, chopped<\/li>\n<li>\u00bdtsp lemon juice<\/li>\n<li>\u00bctsp salt<\/li>\n<li>\u00bctsp freshly ground pepper<\/li>\n<li>\u00bctsp <a href=\"https:\/\/www.faithful-to-nature.co.za\/Kalyan-Cumin-Powder-p-3915.html\" target=\"_blank\" rel=\"noopener\">ground cumin<\/a><\/li>\n<li>6 medium to large ripe tomatoes<\/li>\n<\/ul>\n<h3><strong>METHOD:<\/strong><\/h3>\n<ol>\n<li>Prepare your rice a day (or even an hour) before your area is scheduled for load shedding. Stir to coat.<\/li>\n<li>Cook for about 10 minutes, stirring occasionally, until potatoes start to brown.<\/li>\n<li>Add 2-3Tbsp filtered water; cover the pan &amp; steam for about 5 minutes.<\/li>\n<li>Add the seasonings; cook while stirring occasionally until fully browned &amp; crispy. Serve &amp; enjoy.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<hr \/>\n<h2><strong>MAGICAL BRAAI&#8217;D MUSHROOMS<br \/>\n<\/strong><strong style=\"font-size: 16px;\"><em>Serves 4<\/em><\/strong><\/h2>\n<p>The family braai isn\u2019t just a summertime activity anymore \u2013 the braai really can be your best friend when load shedding strikes. This divine side dish will soon become a firm favourite.<\/p>\n<h3><strong>INGREDIENTS:<\/strong><\/h3>\n<ul>\n<li>4 large brown mushrooms<\/li>\n<li>1 onion, sliced into rings<\/li>\n<li>1 clove of garlic, finely chopped<\/li>\n<li>1 fresh lemon<\/li>\n<li>1 generous handful of cheese, grated<\/li>\n<li>Salt &amp; black pepper to taste<\/li>\n<\/ul>\n<h3><strong>METHOD:<\/strong><\/h3>\n<ol>\n<li>Place the mushrooms upside down with their stalks facing up. Layer a few onion rings onto each mushroom.<\/li>\n<li>Add a squeeze of lemon juice to each mushroom.<\/li>\n<li>Sprinkle the garlic &amp; cheese on top of your mushrooms. Season to taste.<\/li>\n<li>Place on the braai until the cheese melts.<\/li>\n<li>Enjoy with sundried tomatoes &amp; a splash of your favourite braai sauce.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<hr \/>\n<h2><strong>THE GOOD OL&#8217; ALT SANDBO\u00a0<\/strong><\/h2>\n<p><strong><em>Serves 4<\/em><\/strong><\/p>\n<p>When you\u2019re caught unawares, the humble sandwich can be the answer to your load shedding woes. This is the veggie-friendly answer to the BLT (Bacon Lettuce &amp; Tomato) sandwich.
