DIY gift: Festive Vegan Cookies

The festive season is a time of socialising, sharing and spreading the love. Homemade cookies just say genuine love and caring.

Bake up a batch of cookies and pop them in a jar, box or bag and decorate them with your own unique creativity. These recipes are vegan and can be made with healthy sugar substitutes.

Soft, Chewy Gingerbread Cookies


• 2 cups flour or gluten-free all-purpose flour
• ½ tsp. baking soda
• 1 tsp. baking powder
• ½ tsp. salt
• ½ tsp. nutmeg, ground
• ½ tsp. cloves, ground
• 1 tsp. cinnamon, ground
• 1 tsp. ginger, ground
• ¼ cup melted coconut oil
• ¾ cup sugar or xylitol
• ¼ cup molasses
• ¼ cup almond milk
• Optional – xylitol icing sugar or icing sugar for dusting

How to:

• Put the gluten-free flour, baking soda, baking powder, salt, nutmeg, cloves, cinnamon and ginger in a bowl and whisk
• In a separate bowl beat coconut oil and xylitol together for 2 minutes
• Add molasses and almond milk to the oil mixture
• Add the dry ingredients a third at a time, mixing in until you have a dough
• Wrap in plastic and place in fridge for 2 hours at least, or overnight
• Preheat oven to 180°C
• Line a baking tray with baking paper
• Roll dough into balls of about a tablespoon
• Flatten them into a disc shape
• Place on baking tray
• Bake for 7 minutes.
• Cool cookies on baking sheet for 5 minutes before transferring to a cooling rack
• Optional – sprinkle cooled cookies lightly with xylitol icing sugar, using a sieve

Vegan Chocachino Cookies


• 2½ cups all-purpose flour (you can use Gluten-free all-purpose flour too)
• 1 cup coconut oil
• 1 cup raw sugar or xylitol
• ¼ tsp salt
• 1 tbsp vanilla extract
• 1 tsp ground cinnamon
• 1 tsp instant coffee
• ½ cup cacao nibs

How to:

• Melt the cacao nibs in a double boiler (or a bowl placed over a pot of simmering water)
• Whisk the sugar/xylitol, salt, and coconut oil together for a minute or so
• Add the vanilla, cinnamon, coffee and melted chocolate and beat together
• Add the flour and mix with a spatula
• Cover the bowl and place in the fridge for at least an hour
• Preheat the oven to 180°C
• Lightly grease two cookie sheets
• Make 1 cm balls from the dough and flatten into discs
• Place on the cookie sheet
• Bake for 14 minutes, turning the sheet once halfway through baking
• Remove from oven and cool
