Vanilla pods are a real culinary treasure, and can be used in your favourite baked goods, or a whole range of sweet and savoury dishes. These natural vanilla pods from Vanilla Man are beautifully packaged in a glass tube, making them a lovely gourmet gift – for a loved one or yourself!

Vanilla Man products are all genuine; that is, real natural vanilla from the orchid fruit, and not synthetically produced vanillin.

Storage: Store your vanilla pods is in an airtight container in the freezer, or in a glass jar at ambient temperature, out of direct sunlight. With proper storage, vanilla pods should last for years. When it’s fresh, your vanilla pod should be able to bend and twist without snapping.

Recipe for Coriander Vanilla Sauce:

  • ½ cup onions, sliced
  • ¼ cup celery, sliced
  • 3Tbsp coriander seeds
  • 1 Vanilla Man Vanilla Pod
  • 1 bay leaf
  • 6 fresh thyme sprigs
  • 2tsp butter or coconut oil
  • 1tsp fresh garlic, minced
  • Vegetable stock (both) as needed
  • Pinch of salt


  • Melt the butter over low heat in a large saucepan; add the onions, celery & garlic.
  • Split and scrape the vanilla pod; add the seeds & the empty pod to the saucepan.
  • Add the thyme sprigs and bay leaf. Season lightly with salt. Cover the pan & allow the ingredients to start sweating (wilting).
  • Toast the coriander seeds in a small saucepan, until they start to smoke & smell fragrant.
  • Add the toasted seeds to the mixture & let it sweat, covered until the vegetables become translucent.
  • Add enough vegetable stock to cover all of the ingredients fully.
  • Increase the heat & allow the sauce to simmer , until it reduces to about half its original volume. Do not allow the sauce to boil.
  • Strain the sauce through a fine mesh strainer. Season to taste and serve over a savoury dish.
