Gluten is a protein fraction found in certain grains, such as wheat, barley, oats and rye. This protein gives dough its elasticity, helps it to rise and allows it to keep its shape. Gluten is highly absorbent – during kneading, it will absorb water and swell up to 200%, producing a light, strong and elastic dough perfect for baking.

Natures choice Gluten Powder is part of the bio-friendly range, produced in-house and free of preservatives and additives.


Use in small quantities as a flour improver during baking.


Gluten should be used sparingly as a flour improver, as it is not a health product. Natures Choice does not recommend the use of “gluten steaks” as a source of protein.

  • I use it to make seitan
    29 Jan, 2016, By Maureen I do not use this for bread making. As a vegan I make seitan (wheat meat) and I use this a lot. It always works well, the family enjoy the cutlets and strips that I make using this. I always have a couple of packets in my pantry.
