Creaming honey in a traditional manner is very simple. It is a low temperature process used historically by beekeepers to slow down the natural crystallization of honey without damaging it in the process. If you’ve ever left a jar of raw, liquid honey in the pantry for a long time, you know those large chunks of honey crystals make pouring very difficult. The crystallised honey is used to produce creamed honey with a little bit of liquid honey for a smooth, creamy taste and texture.
Raw honey doesn’t degrade so you can stock up without worrying it will go off. If it starts to crystallise simply place the jar in some hot water to warm it ever so gently, this will dissolve the crystals.
