Spelt is an ancient species of wheat that dates back 8000 years and is distantly related to modern-day wheat. Today, because spelt has not been hybridised or exposed to chemicals through factory farming, it is considered a healthier alternative to wheat and can often be better tolerated by those with gluten sensitivities.
Spelt’s naturally high water solubility makes it easy for our bodies to absorb all those wonderful nutrients. Spelt is higher in protein and B complex vitamins than wheat, and also easier to digest. It’s a great source of fibre, manganese and copper, as well as simple and complex carbohydrates.

Soak spelt overnight before cooking. Cover with water rising one inch above the grain. Bring to a boil. Simmer on low heat for one hour in covered pot. Cook until chewy and soft.
