Dulse is a type of seaweed, and is a nutritional power-house with high levels of iodine, calcium, iron, potassium, zinc and magnesium. It contains vitamins A, C, E and most Bs, including B6 and B12.

Traditionally added to miso soup, dulse can be added to stir fries, omelets, salads and even muffin and scone batter.

Calories and Fat
A 1/3 cup serving of Dulse has 18 calories. This is a heart-healthy food as it has no saturated fat and no cholesterol. With 2 g of fiber, this food is surprisingly filling. The Harvard School of Public Health recommends that you consume 14 g of fiber for every 1,000 calories. The fiber-to-calories ratio of Dulse far exceeds this recommendation, allowing you to eat other low fiber foods like yogurt and cheese.

There are 2 g of protein in a 1/3 cup serving of dulse, which satisfies 4 percent of the daily value, based on a 2,000 calorie diet. Although this may not be a substantial amount of protein, it is surprising to find this much protein in such a low-calorie food, which suggests that Dulse is a nutrient-dense food.

Dulse has 122 mg of sodium in a 1/3 cup serving. This is approximately 8 percent of the 1,500 mg limit suggested by the Harvard School of Public Health and the American Heart Association. Given that Dulse is usually used as a flavoring, often with other salty foods such as miso, you should consider whether you can incorporate this much sodium in your diet.

Vitamins and Minerals
For such a low calorie food, Dulse is surprisingly nutritious. Rich in B vitamins, it supplies 10 percent of the daily value for riboflavin and niacin, 42 percent for B-6 and 23 percent for B-12. While it has no vitamin C and provides only 2 percent of the daily value for calcium, zinc and vitamin A, one 1/3-cup serving provides 19 percent of the daily value for iron and 9 percent for chromium. Vegetarian foods that supply this much iron are very rare. Vegetarians, vegans and those with anemia should consider eating dulse regularly.
